This TEXAS TWISTER is somewhat like a blood Mary without the spirits I like it better this way, OH yes chill 30 minutes before serving. Summer is just about on us and we are going to need something to COOL us down.

Number Of Ingredients 6

2 c tomato juice
1 dash(es) worcestershire sauce
1 small red chili
1 scallion
6 ice cubes
2 long red chiles for garnish

Steps:

  • 1. Put the tomato juice and worcestershire sauce into a food processor and process gently until combined. Add the chopped chile, scallions, and ice cubes and process until smooth.
  • 2. Pour the mixture into glasses and garnish with chili flowers. Add straws and serve.
  • 3. To make the chile flowers, use a sharp knife to make six cuts along each chile. Place the point of the knife about 1/2 inch from the stem end ans cut toward the tip. Put the chiles in a bowl of ice water and let stand for 25 -30 minutes until they have spread out into flower shapes.

5 stalk(s) green onions, chopped
8 oz cream cheese, softened
8 oz sour cream
4 oz chili peppers, drained
2 Tbsp chopped black olives
1/2 c cheddar cheese, shredded
12 large flour tortillas

Steps:

  • 1. In a food processor, combine cream cheese, sour cream, green onions, cheddar cheese, and olives. Process until smooth.
  • 2. Spread a tablespoon of mixture on a flour tortilla.
  • 3. Roll each tortilla up tightly. Continue until all mixture is used.
  • 4. Wrap tortilla rolls individually in damp paper towels. Place in airtight plastic bags. Chill until ready to serve.
  • 5. Slice each rolled tortilla crosswise into 1-inch pieces. Place a toothpick in each pinwheel. Serve with a bowl of picante sauce or salsa on the side for dipping.

My version of the Riscky's BBQ Original. They offer them as an appetizer but I can make a meal of it. While the real thing is best, one serving equals my total monthly fat allotment. I skinnied it down by sauteeing the onions & peppers rather than dropping them in the deep fryer as they do. I also prefer to oven bake fresh cut potatoes.We like them to put the quick back in our step so I pepper heavily. Fork required!

32 ounces frozen french fries (or use your favorite home made version)
1 large sweet onion, peeled, sliced thin & ringed
1 cup sliced pickled jalapeno peppers, canned (preferred) or 1 cup sliced fresh jalapeno
1 tablespoon vegetable oil
salt
ground black pepper
ranch dressing (optional)

Steps:

  • Bake or fry potatoes, whichever you prefer.
  • Pour oil in a large skillet. Add onions & jalapenos & cook, stirring often, till onions are tender, about 5 minutes.
  • **We prefer the canned jalapenos because the vinegar seeps into the onions while cooking & flavors the whole dish. If using fresh peppers, you may need either more oil or a dash of vinegar.
  • Spoon half the onion/pepper mixture onto a serving dish. Top with hot fries. Add remaining onion & peppers.
  • Salt to taste but pepper liberally.
  • To make it authentic, serve with ranch dressing for dipping rather than ketchup.

This is a non-alcoholic fruit punch, similar to the Texas Twister lemonades sold at fairs. It isn't exact but it is very close according "The Suzzzz" from Tasty Kitchen. One more thing, listed below 8 cups of Sprite is be used. According to the Tasty Kitchen recipe, the amount should be: 8 cups, 7 tablespoons, 3/4 teaspoons, 1/3 pinches Sprite Lemon Lime Soda. You can make the adjustment, but I doubt if it would seriously make a difference. Also, remember, this is "faux". The original recipe is top secret, but it's fun trying to duplicate. Try it for your 4th of July gathering!

6 whole lemons
6 whole limes
1/3 cup grenadine
1/3 cup maraschino cherry syrup
1/4 cup granulated sugar
4 cups ice
8 cups sprite carbonated lemon-lime beverage
12 maraschino cherries

  • Wash all of the fruit, with peels still on.
  • Juice 5 of the oranges, 5 of the lemons and 5 of the limes; pour juices into a blender with grenadine, cherry syrup, and sugar. Blend on high for about 30 seconds.
