½ teaspoon salt
½ cup buttermilk
2 large eggs
1 teaspoon baking soda
1 teaspoon vanilla extract
½ cup unsalted butter
6 tablespoons milk
3 tablespoons cocoa powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10x15-inch cake pan.

Although not shown here in our recipe photos, we think this dish would also be delicious with cheddar cheese on top! (We've listed that as an optional ingredient in the recipe below.)

Time 30m

Number Of Ingredients 15

2 tablespoons olive oil
1 cup diced onion
1 cup diced green bell pepper
1 tablespoon minced fresh garlic
1 pound ground beef, 80/20
½ teaspoon dry mustard
2 teaspoons chili powder
2 teaspoons kosher salt
¼ teaspoon freshly ground black pepper
½ cup uncooked long grain white rice
2 tablespoons tomato paste
1 14.5-ounce can diced tomatoes with juice
1 cup water
1 teaspoon Worcestershire sauce
1 cup shredded cheddar cheese, optional and not shown in our photo

Steps:

  • In a skillet that has a tight fitting cover, heat olive oil over medium high.
  • Add onion, peppers, garlic, ground beef, dry mustard, chili powder, salt and pepper. Sauté until ground beef is no longer pink, breaking up beef as you cook.
  • Add rice and cook for two minutes letting rice absorb liquid.
  • Add tomato paste and cook for one minute.
  • Add canned tomatoes with juice, water and Worcestershire sauce. Stir, cover and simmer for 20 minutes covered.
  • After 20 minutes, remove lid and fluff the mixture then serve. If the mixture is too wet, cook for another few minutes with lid off.
  • If you are using the cheese, sprinkle on top for last few minutes of cooking time with lid on.

Chili powder
Garlic powder
Ground black pepper
4 potatoes, diced
1 stick butter, divided
6 green bell peppers, chopped, plus 2 red bell peppers, chopped
4 onions, chopped
Oil, for deep-frying, plus more for frying eggs
16 corn tortillas
1 cup all-purpose flour
3 cups milk
1 habanero pepper, chopped
4 cups grated cheese, any cheese of choice
8 eggs
Tony Chachere's seasoning, to taste
Avocado slices, for garnish
Tomato slices, for garnish

Steps:

  • For the Texas Chicken Hash: Preheat the oven to 350 degrees F.

Categories     Potato

Time 30m

Yield 6 serving(s)

Number Of Ingredients 5

1 tablespoon unsalted butter
1 red onion
2 ripe avocados
1 (24 ounce) package Simply Potatoes® Shredded Hash Browns
8 ounces uncased mexican chorizo sausage

Steps:

  • Heat a non-stick skillet over medium heat. Add the chorizo and use a spoon to break it up and cook it until it is cooked through (approximately 8-10 minutes).
  • In another skillet, heat butter over medium-high heat. Form hash browns into 6 small, flat rounds and place in hot pan. Cook hash brown cakes until golden and crispy (about 5-6 minutes), flip, and repeat on the other side.
  • While hash brown cakes are cooking, prep fresh ingredients by slicing onion into 1/8 inch rounds and slicing avocado into 1/8 inch thick strips.
  • Place hash brown cakes onto serving platter, spoon a generous portion of chorizo over the cakes, top with a few onion rounds and 3-4 strips of avocado. Serve immediately.

Tips:

  • To ensure perfectly crispy hash cakes, use leftover mashed potatoes that have been refrigerated overnight. This allows the potatoes to firm up and hold their shape better when cooked.
  • For a crispy crust and tender interior, cook the hash cakes over medium heat until golden brown on both sides. Avoid overcrowding the pan, as this can prevent even cooking.
  • Feel free to customize the hash cakes with your favorite mix-ins. Some popular options include diced bell peppers, onions, bacon, sausage, and cheese.
  • Serve the hash cakes immediately with your favorite toppings. Some classic options include sour cream, salsa, guacamole, and fried eggs.

Conclusion:

Texas hash cakes are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are easy to make and can be customized to suit your taste. Whether you like them classic or loaded with mix-ins, Texas hash cakes are sure to be a hit. So next time you have leftover mashed potatoes, don't hesitate to give this recipe a try!
