2 dried Ancho chilies
2 dried Guajillo chilies
2 tablespoons chili powder
2 tablespoons paprika
2 tablespoons ground cumin
2 tablespoons cocoa powder
3 tablespoons masa flour
1 tablespoon garlic powder
1 tablespoon dried oregano
1 teaspoon ground cinnamon
1 tablespoon salt, plus more for seasoning if needed
1 tablespoon black pepper, plus more for seasoning if needed
2 tablespoons olive oil
3 pounds beef chuck roast, cut into 1/2 in. cubes
1 medium white onion
2 jalapeños
3 cups beef stock (divided 1 cup and 2 cups)
1 bottle (12 fl oz) Shiner Black Lager or Shiner Bock
2 tablespoons brown sugar
2 tablespoons apple cider vinegar

Steps:

  • Cut the stems off the dried chilies and remove all of the seeds. Place them in a blender with 1 cup of warm beef stock. Cover the blender and let them soak in the beef stock for 30 minutes.
  • While the dried chilies are soaking, cut the beef chuck roast into 1/2 inch cubes and dice the white onion and jalapeños.
  • In a bowl, mix together the chili powder, paprika, ground cumin, garlic powder, dried oregano, masa flour, ground cinnamon, cocoa powder, salt, and pepper. Set aside.
  • After 30 minutes, puree the chilies and beef stock together to create a homemade chili paste. Set aside.
  • Heat olive oil in a medium cast-iron Dutch oven. Brown the beef chuck cubes on all sides. If there is not enough room in the Dutch oven, brown the beef chuck cubes in batches. Do not remove the brown buts or liquid from the Dutch oven - this has all the flavor and will be used for the Texas Chili. Remove the browned beef chuck and set aside.
  • Using the remaining liquid in the saucepan, sauté the onions till translucent. Then add the diced jalapeños.
  • Deglaze the Dutch oven by adding the Shiner beer, remaining 2 cups of beef stock, and apple cider vinegar. Then scrape the bottom of the pan with a spatula to get all the bits of flavor incorporated.
  • Add the beef chuck back into the Dutch oven along with the homemade chili paste, dry ingredient mix, and brown sugar. Mix all of the ingredients together and bring to a boil.
  • Once it comes to a boil, lower the heat, slightly cover the Dutch oven, and simmer for 2 - 2.5 hours or until the beef chuck is tender. Make sure you stir the Texas Chili occasionally.
  • Once the beef chuck is tender, serve the Texas Chili with a dollop of sour cream, shredded cheddar cheese, sliced jalapeños, and a side of cornbread.

1 cup diced yellow onion

One 14-ounce can tomato sauce
One 14-ounce can diced green chiles
12 ounces beef broth
12 ounces chicken broth

1 tablespoon hot sauce, such as Louisiana
One 14-ounce can diced tomatoes
2 dried California chiles
1 dried New Mexico chile
Cheap beer, optional
2 pounds chopped smoked brisket or browned ground beef

Steps:

  • Heat a large pot over medium heat and add the olive oil. Add the onions and garlic and cook, stirring occasionally, until translucent. Add the dark, light and California chili powders, cumin, oregano and cayenne and cook, stirring, until fragrant, about 2 minutes.

3 tablespoons vegetable oil, divided
4 pounds beef chuck roast, cut into ½-inch cubes
6 cloves garlic, roughly chopped
1 medium onion, roughly chopped
2 jalapeño peppers, roughly chopped, remove seeds and ribs for milder chili
28 ounces can diced tomatoes
6 tablespoons gochujang
2 tablespoons brown sugar
1 1/2 teaspoons salt
1/4 cup chipotle peppers in adobo sauce, roughly chopped
1 tablespoon ground cumin
1 teaspoon ground coriander
1 bottle dark beer
4 cups beef stock, plus more if necessary

  • In a large heavy-bottomed pot, heat 1½ tablespoons vegetable oil over medium heat; add half the meat and brown on all sides, 3 minutes per side. Repeat with the remaining oil and meat.
  • Return the meat to the pot, and add garlic, onion, and jalapeño; stir to combine. Add remaining chili ingredients, making sure the beef stock covers everything. Bring to a simmer, then reduce heat to low and let simmer uncovered, 1½-2½ hours, stirring occasionally.

1 onion, chopped
1 tablespoon minced garlic
dill, to taste
chili powder, to taste

2 (14 ounce) cans diced tomatoes, drained or 2 (14 ounce) cans substitute your favorite rotel
1 (6 ounce) can tomato paste
4 (16 ounce) cans chili beans
3/4 cup picante sauce, your favorite flavor and heat
1/2-3/4 cup barbecue sauce (I love the original KC Masterpiece, but any thick, sweet BBQ sauce should work.)
1 (4 ounce) can diced green chilies
sour cream
shredded cheddar cheese
Frito Scoops
prepared macaroni and cheese

Steps:

  • Sauté onion in a little bit of oil. Add ground beef and minced garlic. Dust with dill, chili powder, cumin and red pepper flakes. Mix and cook covered over medium heat, stirring occasionally, until beef is cooked through. Drain fat.
  • Add tomatoes, tomato paste and beans.
  • Add picante sauce, barbecue sauce, diced green chilies.
  • Add any additional chili powder and/or red pepper flakes.
  • Bring to a low boil, reduce heat to low and simmer for 30 minutes or more. I have let this simmer for up to 2 hours and the longer it sits, the yummier it gets. It's great the next day, and the day after, too!
  • Serve with sour cream and shredded cheese on top. Eat with the Frito Scoops if you are feeling adventurous enough to dig in without a spoon.
  • Optional - Make a box of mac 'n cheese and ring your chili bowl with it before spooning in the chili. Delectable!
