ACTUALLY DELICIOUS TURKEY BURGERS

Actually Delicious Turkey Burgers image

This is a simple and delicious recipe. After making them the first time my husband said 'no more' to beef burgers. These are really good - any cooking method may be used, and they freeze very well. The recipe can also be used for meatballs or meat loaves.

Time 30m

Yield 4 servings

Number Of Ingredients 11

1 cup roughly chopped fresh chives
2 tablespoons olive oil
2 pounds free-range ground turkey meat
1/4 cup finely diced shallots
2 tablespoons Dijon mustard
1 tablespoon kosher salt
1 red bell pepper, finely diced
4 brioche burger buns
4 homemade or store-bought roasted tomato halves
1 bunch watercress, cleaned and stemmed
1/2 cup homemade or store-bought ranch dressing

Steps:

  • Place the chives in the pitcher of a blender with the olive oil. Blend until smooth.
  • In a medium bowl, add the chive puree, turkey, shallots, mustard, salt and bell peppers. Using clean hands, blend the mixture together until incorporated. Portion the turkey into 4 large burger patties and place on a tray and refrigerate.
  • On a hot grill or in a hot saute pan, sear the burgers on each side and then reduce the heat or move the burgers to a cooler spot on the grill, and continue to cook for 10 to 12 minutes. To test for doneness, poke the burgers with a skewer and press down to see if the juices run clear, or a meat thermometer inserted in the center reads 150 degrees F.
  • Split and toast the buns, and then top each with a burger, a piece of roasted tomato, some watercress and some ranch dressing. Top each with the other half of the buns, then place a large skewer through the burgers and serve!

Time 20m

Yield 4 serving(s)

Number Of Ingredients 9

1 lb lean ground turkey
1/2 cup breadcrumbs (I use sourdough breadcrumbs, but you could also use whole grain)
1/3 cup finely chopped onion
1/4 cup ketchup (If using ketchup, make sure it's SB friendly) or 1/4 cup tomato sauce (If using ketchup, make sure it's SB friendly)
1 tablespoon lemon juice
2 teaspoons soy sauce (Light soy sauce can be subbed.)
2 teaspoons Worcestershire sauce
1/8 teaspoon pepper
4 hamburger buns, split (Again, I use sourdough, but you could also use wholegrain buns or bread)

Steps:

  • Heat grill. In large bowl, combine all ingredients except buns; mix well. Shape mixture into 4 patties, 1/2 inch thick.
  • When ready to grill, lightly oil grill rack. Place patties on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 12 minutes or until patties are no longer pink in center, turning once.
  • Meanwhile, place buns, cut side down, on grill. Cook 1 to 2 minutes or until lightly toasted. Place patties in buns.

Tips:

  • Use ground turkey breast for a leaner burger. It has less fat and calories than ground turkey thigh.
  • Add moisture to the burgers. Ground turkey can be dry, so adding ingredients like breadcrumbs, eggs, or vegetables will help keep them moist and juicy.
  • Season the burgers well. Turkey has a mild flavor, so don't be afraid to use plenty of herbs and spices. Garlic, onion, cumin, and chili powder are all good choices.
  • Don't overcook the burgers. Turkey burgers should be cooked to an internal temperature of 165 degrees Fahrenheit. Overcooking will make them dry and tough.
  • Serve the burgers on your favorite bun. Turkey burgers can be dressed up or down, so they can be served on anything from a simple hamburger bun to a gourmet brioche bun.

Conclusion:

Turkey burgers are a delicious and healthy alternative to beef burgers. They are leaner, lower in calories, and just as flavorful. With the right ingredients and cooking techniques, you can make turkey burgers that are moist, juicy, and packed with flavor. So next time you're in the mood for a burger, give turkey burgers a try. You won't be disappointed.
