TASTY TACO MAC

Tasty Taco Mac image

My son loves this...he'll eat it till it's gone...lol! It's a lot like Goulash...add condiments, such as sour cream, extra onions, jalapeno slices etc... My son prefers it right from the pan, the way it is...you could serve it with a simple salad, and some crusty bread, and you'll have one tasty meal. Even better...

Time 20m

Number Of Ingredients 11

16 oz cooked and drained - not rinsed, pasta, your choice - I used a blend
1 lb ground beef
1/2 - 3/4 c green bell or jalapeno pepper, chopped
1 onion, chopped
1 1/2 pkg 1.25 size taco seasoning mix
1 - 29 oz tomato sauce
1 - 14.5 oz can, plum tomatoes, drained & chopped
1 1/2 - 2 Tbsp sugar
1 1/2 tsp garlic powder
1 c shredded, cheddar cheese
condiments of your choice if any - is good alone

Steps:

  • 1. Cook your pasta as stated on box or bag, drain - don't rinse.
  • 2. In a large skillet, brown ground beef, peppers and onions, until beef is no longer pink, and veggies are soft. Drain
  • 3. Add 1 1/2 packages of taco seasoning and 1/2 cup water. Simmer for a few minutes. (You can add 2 whole packages of seasoning if you wish for more taco flavor. think 1 1/2 is just right.)
  • 4. Add tomato sauce, chopped tomatoes, seasonings. Simmer until heated through.
  • 5. Stir in your pasta.
  • 6. Sprinkle cheese evenly on top, cover and remain cooking until cheese is melted. Enjoy!

Tips:

  • Use any ground meat you like: Beef, turkey, or chicken can all be used in this recipe.
  • Add some heat: If you like spicy food, add a diced jalapeño or some chili powder to the taco seasoning.
  • Don't overcook the pasta: Cook the pasta according to the package directions, but be careful not to overcook it. Al dente pasta is best.
  • Use a good quality cheese: A sharp cheddar or Monterey Jack cheese will give the mac and cheese a delicious flavor.
  • Top it off: Before serving, top the mac and cheese with your favorite taco toppings, such as salsa, guacamole, sour cream, and cilantro.

Conclusion:

Taco mac is a quick and easy meal that is perfect for busy weeknights. It's also a great way to use up leftover taco meat. With its creamy, cheesy, and flavorful sauce, this dish is sure to be a hit with the whole family. So next time you're looking for a delicious and satisfying meal, give taco mac a try!
