Tips:

  • To ensure your soup is flavorful and delicious, use high-quality ingredients such as fresh vegetables, flavorful cheese, and tender corned beef.
  • If you don't have Swiss cheese, you can use another type of cheese that melts well, such as mozzarella or cheddar.
  • To make the soup thicker, you can add a cornstarch or flour slurry. To make a slurry, mix equal parts cornstarch or flour with water until smooth. Then, stir the slurry into the soup and bring to a simmer. Cook for 1-2 minutes, or until the soup has reached your desired consistency.
  • To add a bit of spice to the soup, you can add a pinch of cayenne pepper or red pepper flakes.
  • If you want a more tangy flavor, you can add a tablespoon of sauerkraut brine to the soup.
  • For a vegetarian version of this soup, you can omit the corned beef and use vegetable broth instead of beef broth.

Conclusion:

Reuben soup is a hearty and flavorful soup that is perfect for a cold winter day. It is also a great way to use up leftover corned beef. Whether you are making it for a special occasion or a simple weeknight meal, this soup is sure to please everyone at the table. Enjoy!
