GRILLED FISH WITH TARRAGON BEURRE BLANC

Grilled Fish with Tarragon Beurre Blanc image

I prefer a charcoal grill, but an indoor grill pan is fine. I like to use grouper or amberjack....a nice fish that will hold together on the grill.

Categories     Fish

Time 25m

Number Of Ingredients 9

2/3 c dry white wine
1/4 c shallots, chopped
1/2 tsp whole black peppercorns
2 large tarragon sprigs
3 Tbsp butter, cut into small pieces
1 tsp fresh tarragon, chopped
4 6 ounce fish fillets
1/4 tsp kosher salt
1/4 tsp black pepper, freshly ground

Steps:

  • 1. Combine the first 4 ingredients in a small heavy saucepan over medium-high heat; bring to a boil. Cook until the liquid is reduced to 2 tablespoons (about 9 minutes). Remove from the heat, and strain through a fine sieve over a measuring cup, pressing the mixture to release liquid. Discard the solids. Return the liquid to the pan.
  • 2. Add butter, 1 piece at a time, stirring with a whisk until the butter is incorporated. Stir in the chopped tarragon.
  • 3. Sprinkle the fish evenly with salt and pepper. Heat a large grill pan (or cook on your grill.....preferred) over medium-high heat. Coat the grill with cooking spray. Add fish, and cook for 5 minutes on each side or until the desired degree of doneness. Serve with the sauce.

CHEF JOHN'S TARRAGON AIOLI

Chef John's Tarragon Aioli image

The beauty of aioli made in the traditional method with a mortar and pestle is that a small amount of garlic can flavor a large amount of mayo. Also, this real aioli is so strong and powerful that you don't need half a cup of mayo on your grilled fish. Just a teaspoon of my version is so intense it will fully flavor a whole piece of meat or pile of veggies.

Yield Serves 6

Number Of Ingredients 11

2 medium-size red onions, cut into 1/2-inch-thick rounds
2 red bell peppers, quartered lengthwise, seeded
4 zucchini or yellow crookneck squash, cut on diagonal into 1/2-inch-thick slices
2 large portobello mushrooms, dark gills scraped away, quartered
1 head radicchio, cut into 6 wedges
6 tablespoons (3/4 stick) butter
6 small garlic cloves, minced
2 teaspoons dried tarragon
3 tablespoons dry white wine
1 tablespoon olive oil
Lemon wedges

Steps:

  • Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 500°F. Arrange vegetables in single layer on 2 large baking sheets. Stir butter, garlic and tarragon in heavy small saucepan over low heat until butter melts. Whisk in wine and oil. Brush vegetables with all of butter mixture; sprinkle generously with salt and pepper.
  • Roast vegetables 10 minutes. Turn vegetables over, reverse position of baking sheets and roast until vegetables are tender and browned in spots, about 10 minutes longer. Transfer vegetables to large platter. Serve with lemon wedges.

Tips:

  • Choose the right fish: For this recipe, a firm-fleshed fish like salmon, halibut, or tilapia works best. These fish will hold up well on the grill and won't fall apart.
  • Marinate the fish: Marinating the fish in a mixture of olive oil, lemon juice, herbs, and spices helps to infuse it with flavor and keep it moist during grilling.
  • Use a grill basket: A grill basket is a great way to cook fish and vegetables together without having to worry about them falling through the grates. Plus, it makes it easy to flip the food.
  • Don't overcook the fish: Fish cooks quickly, so it's important to keep an eye on it and not overcook it. Otherwise, it will become dry and tough.
  • Serve with your favorite sides: This grilled fish and vegetables dish is delicious served with rice, roasted potatoes, or a salad.

Conclusion:

This tarragon grilled fish and vegetables recipe is a delicious and healthy way to enjoy a summer meal. The fish is marinated in a flavorful mixture of olive oil, lemon juice, herbs, and spices, then grilled to perfection. The vegetables are also grilled, adding a colorful and nutritious side dish. This dish is sure to please everyone at your table.
