¼ teaspoon salt
2 eggs, beaten

Steps:

  • Stir together the milk, tapioca, sugar, and salt in a medium saucepan. Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat to low; cook and stir 5 minutes longer.
  • Whisk 1 cup of the hot milk mixture into the beaten eggs, 2 tablespoons at a time until incorporated. Stir the egg mixture back into the tapioca until well mixed. Bring the pudding to a gentle simmer over medium-low heat; cook and stir 2 minutes longer until the pudding becomes thick enough to evenly coat the back of a metal spoon. ⅔ cup quick cooking pearl tapioca
2 (14 ounce) cans coconut milk
¼ teaspoon salt
½ cup white sugar
1 egg
1 teaspoon vanilla extract

Steps:

  • Bring the tapioca, coconut milk, and salt to a boil in a saucepan over medium-high heat, stirring constantly. Reduce heat to medium-low, and simmer for 5 minutes. Stir in the sugar until dissolved.
  • Beat the egg in a bowl until smooth. Whisk in about 1/2 cup of the hot tapioca mixture, 1 tablespoon at a time, then scrape the egg mixture into the simmering pudding, and stir. 1/3 c granulated sugar
3 Tbsp minute tapioca
2 3/4 c milk
1 egg, well beaten
1 tsp vanilla extract

Steps:

  • 1. Mix sugar,tapioca, milk and egg in medium sauce pan and let stand 5 minutes
  • 2. Cook on Medium heat, stiring constantly, until mixture comes to a full boil (pudding thickens as it cools). Remove from heat and stir in vanilla.
  • 3. Cool 20 minutes. Serve warm or chilled. Store leftover puddng in refrigerator.
  • 4. NOTE: This is the original recipe from the side of the box of Minute Tapioca. I make all of my puddings in the microwave. You never have to worry about scalding, sticking or burning if preparing in the microwave. However, you do need to keep an eye on it through the window of the microwave so it doesn't boil over.
  • 5. HINT: If you cover pudding with plastic wrap or a cover of some sort while cooling, pudding will not get the thick gooey layer on top.

1 large egg. white
3 Tbsp minute tapioca
1 large egg .....yolk
6 Tbsp sugar
2 c milk
1 tsp vanilla
ground nutmeg

Steps:

  • 1. Beat egg white in a medium size bowl with an electric mixer on high speed untilfoamy. Gradually add 3 Taablespoons sugar, slowly, beating till soft peaks form.
  • 2. Mix tapioca, remaining 3 Tablespoons sugar, milk,and egg yolk in a medium saucepan. Let sit for at least 5 minutes.
  • 3. Cook on medium heat, stirring constantly, until mixture comes to a full boil. (a boil that doesn't stop bubbling when stirred)
  • 4. Remove from heat. Quickly stir in fluffy egg whites untill well blended. Stir in vanila. Cool 20 minutes, stir. Serve warm or cold. With a sprinkle of ground nutmeg. This is my version of the fruit juice pudding recipe on the Minute Tapioca box. I omitted the sugar from the original recipe which I think is rather unnecessary. 1/2 cup pearl tapioca
2 1/2 cups milk
1/4 teaspoon salt
1/2 cup sugar
2 eggs, separated

  • In a bowl, soak tapioca in 2 cups of room temperature water overnight.
  • Drain water.
  • In double boiler, heat milk just until no longer cold.
  • Add salt and tapioca.
  • Continue heating until small bubbles appear at sides of pan.
  • Cover, turn heat to very low and cook for one hour.
  • Make sure that milk mixture does not simmer or boil.
  • Separate egg whites from yolks.
  • Beat egg yolks and sugar toether until light yellow in color.
  • Add a little of the hot mixture to the egg yolks and blend thoroughly.
  • Then add the egg yolk mixture to the hot milk mixture, stirring constantly.
  • Place the double boiler over medium heat and cook until tapioca mixture is very thick, about 15 minutes.
  • Beat egg whites until stiff.
  • Slowly fold the hot tapioca mixture into the egg whites.
  • Stir in vanilla.
  • Serve warm or chilled.

1 (14-oz) can unsweetened coconut milk (do not shake)

Steps:

  • Make pudding:
  • Bring 6 cups water to a boil in a large saucepan and add tapioca in a slow stream, stirring constantly. Gently boil, stirring frequently, 5 minutes.
  • Remove from heat and let stand, covered, until tapioca is translucent, about 15 minutes.
  • Add 3 cups cold water to tapioca, then drain in a large sieve. Transfer tapioca to a large bowl. Add cold water to cover by 2 inches and swirl tapioca to remove excess starch. Drain tapioca in sieve and repeat rinsing. Drain tapioca again and divide among 6 serving dishes. Chill, loosely covered, 10 minutes, or until set.
  • Make syrup:
  • Tear pandan leaf into strips and tie strips together in a knot. Simmer pandan with sugar and remaining 1/4 cup water in a small saucepan, stirring until sugar is dissolved, until slightly thickened, about 5 minutes. Discard pandan and pour syrup through a fine sieve into a small bowl. Cool to room temperature.
  • Make coconut cream:
  • Scoop out thick layer of coconut cream from top of can, reserving thin liquid in bottom. Whisk ‚ cup coconut cream until smooth, whisking in 1 to 1‚ tablespoons thin coconut liquid if necessary to get a pourable consistency. Drizzle some of syrup over tapioca and top with some coconut cream. Serve remaining syrup and cream on the side.

1 teaspoon almond extract
1 tablespoon cocoa powder

Steps:

  • Use a 4 qt slow cooker. Combine the milk, sugar and tapioca in the insert. Stir well to mix.
  • Cover and cook on High for two to three hours. It will still be soupy at this point.
  • In a medium or large mixing bowl, whisk together the eggs, almond extract, and cocoa powder.
  • Remove 1/2 cup of the hot tapioca/milk mix from the crockpot, and stir into the eggs, whisking all the time. A standard ladle is 1/2 cup. Add another 1/2 cup of the hot mix, whisk thoroughly, and then another 1/2 cup. This tempers the eggs, so that they don't turn into scrambled eggs.
  • Pour the egg mixture into the slow cooker and stir very thoroughly to combine.
  • Cover and cook on High for 30 minutes to one hour, or until the tapioca has begun to swell and thicken.
  • Turn off the slow cooker, remove the lid and let this stand an hour to thicken further. Remove to a large bowl, cover with plastic pushing the plastic against the tapioca (to prevent a skin from forming), and chill.
  • Note1: I used seed tapioca, about the size of sesame seeds. I will try this using a couple of tablespoons less, to get a slightly looser consistency, although it was just fine the way it was.
  • Note2: I used 2% milk, as that was what I had. I also used only 3/4 cup sugar - the original recipe calls for 1 1/2 cups, and that would have been much too sweet for me. I might double the amount of cocoa powder next time.

2 1/2 cups skim milk
1 1/2 cups agave syrup
1/2 cup tapioca
2 egg yolks
2 1/2 cups cold water

Steps:

  • soak tapioca over night in 2 1/2 cups cold water.
  • Drain tapioca and place in crock pot with milk and cook on high for 2 hours.
  • mix yolks and agave.
  • temper and add into crock
  • cook for 15 more.

Tips:

  • For a creamier pudding, use whole milk or half-and-half instead of skim milk.
  • Add a pinch of salt to the pudding to enhance the flavor.
  • Use a heavy-bottomed saucepan to prevent the pudding from scorching.
  • Stir the pudding constantly while it is cooking to prevent it from forming lumps.
  • Remove the pudding from the heat as soon as it thickens to prevent it from overcooking.
  • Cover the pudding with plastic wrap directly on the surface to prevent a skin from forming.
  • Chill the pudding for at least 2 hours before serving to allow it to set properly.
