SPICY SPINACH ARTICHOKE DIP

Spicy Spinach Artichoke Dip image

I got this recipe out of a flyer for Tabasco sauce years ago. Every time I make it, it's a huge hit. Ordering this at restaurants now is a major disappointment. I always add more cheese and Tabasco sauce and leave out the salt, but it's a personal choice.

Categories     Sauce     Spinach     Healthy     Simmer

Yield serves 4 to 6

Number Of Ingredients 9

2 tablespoons butter
1 small onion, chopped
2 cloves garlic, chopped
2 tablespoons all-purpose flour
1 cup heavy cream
Two 10-ounce boxes frozen chopped spinach, thawed and drained
One 10-ounce can diced tomatoes with green chilies, preferably Ro*tel
1 cup shredded Monterey Jack cheese
Kosher salt

Steps:

  • Melt the butter in a medium saucepan set over medium heat. Once it foams, toss in the onion and garlic, and sauté until softened, about 3 minutes. Sprinkle in the flour, and cook, stirring, until it becomes a light-blond color. Slowly stir in the heavy cream, and bring the sauce to a simmer; cook until it starts to thicken, about 5 minutes. Stir in the spinach, Ro*tel, and cheese, and cook until the cheese is melted. Season to taste with salt.
  • Pour the dip into a serving bowl and serve warm with tortilla chips.

Tips:

  • For a smoother dip, blend the spinach and cream cheese mixture in a food processor until it reaches your desired consistency.
  • For a spicier dip, add an extra 1/4 teaspoon of cayenne pepper or a pinch of chili flakes.
  • For a cheesy dip, add an extra 1/4 cup of shredded cheddar cheese.
  • For a healthier dip, use low-fat cream cheese and Greek yogurt instead of sour cream.
  • Serve the dip with a variety of dippers, such as tortilla chips, crackers, vegetables, or pita bread.
