Steps:
- Preheat oven to 325 F. In a large saucepan, combine sugar and cornstarch. Stir in eggs and lemon juice. Cook over medium heat, stirring constantly with a wire whisk, until mixture comes to a boil. Boil for 3 minutes, stirring constantly. Remove from heat; stir in butter and lemon zest. Pour egg mixture into prepared pie crust. Using the back of a spoon, spread meringue over hot filling, sealing to edge of the pie crust. Bake for 23 minutes. Cool completely on a wire rack. Store in refrigerator.
Tips:
- Choose the right lemons. Meyer lemons are sweeter and less acidic than regular lemons, making them a good choice for this pie. If you're using regular lemons, you may want to add a little more sugar to the filling.
- Zest the lemons before you juice them. This will help to release the essential oils in the lemon peel, which will give your pie a more intense flavor.
- Don't overcook the filling. The filling should be thick and bubbly, but it shouldn't be brown. Overcooked filling will be tough and rubbery.
- Chill the pie before serving. This will help the filling to set and make it easier to slice.
- Serve the pie with a dollop of whipped cream or a scoop of vanilla ice cream. This will add a delicious richness and creaminess to the pie.
Conclusion:
This tangy lemonade pie is a refreshing and delicious dessert that's perfect for any occasion. With its creamy filling, flaky crust, and bright citrus flavor, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this tangy lemonade pie a try. You won't be disappointed!
