Provided by Vered DeLeeuw

Categories     Main Course

Time 50m

Number Of Ingredients 7

8 medium chicken drumsticks (4 oz each)
2 tablespoons olive oil
1 teaspoon Diamond Crystal kosher salt ((not fine salt))
2 teaspoons chili powder
1/2 teaspoon cayenne pepper
2 tablespoons chopped parsley
Pinch red pepper flakes

Steps:

  • Preheat your oven to 400 degrees F. Line a rimmed baking sheet with high-heat-resistant parchment paper.
  • Wipe the chicken drumsticks dry with paper towels. Arrange them in a single layer on the baking sheet.
  • Prepare the rub: In a small bowl, combine the olive oil, kosher salt, chili powder and cayenne pepper to create a paste. Pour the paste over the chicken pieces and, using your hands or a pastry brush, coat the chicken on all sides.
  • Bake the drumsticks until cooked through (their internal temperature should reach 165ºF) and juices run clear, about 40 minutes. Check them after the first 30 minutes and loosely cover them with foil if they seem to be darkening too fast on top.
  • If you wish, garnish with chopped parsley and red pepper flakes, then serve.

TANGY CHICKEN THIGHS

Tangy Chicken Thighs image

I love this dish because it turns affordable chicken thighs into a rich and delicious meal. The sauce is what makes this dish, because it's creamy and tangy. A crisp salad or fresh vegetable rounds out the meal. -Vicki Roelofs, Wyoming, Michigan

TANGY CHICKEN LEGS

Tangy Chicken Legs image

I don't remember where I found this recipe or what I've changed from the original recipe, but it's one that my family and friends use again and again. No one ever expects to find coffee as an ingredient, but it adds the perfect flavor and wouldn't be the same without it. Easy way to make 'BBQ' sauce from stuff sitting around the kitchen.

Categories     Chicken Thigh & Leg

Time 2h15m

Yield 8 serving(s)

Number Of Ingredients 10

1 cup brewed coffee (I use leftover coffee from breakfast)
1 cup ketchup
1/2 cup sugar
1/4 cup brown sugar
1/2 cup Worcestershire sauce
1/4 cup vinegar
2 tablespoons yellow mustard
pepper
1 tablespoon red pepper flakes (more or less to taste)
8 chicken leg quarters

Steps:

  • In a saucepan combine the first nine ingredients.
  • Bring to a boil; reduce heat and simmer uncovered about 45 minutes to an hour, stirring frequently.
  • Put chicken in a 13x9 baking dish and cover with sauce. (The sauce tends to get greasy this way, so I prefer grilling or broiling.)
  • Bake at 350° for an hour or until juices run clear.
  • If grilling, brush chicken with sauce before putting on the grill and brush again every 15 minutes, turning to coat both sides well until chicken juices run clear.

Tips:

  • Choose the right chicken legs: Look for plump, meaty legs with a good amount of skin. Avoid legs that are too thin or have a lot of dark spots or discoloration.
  • Marinate the chicken legs: Marinating the chicken legs in a flavorful mixture of herbs, spices, and liquids will help to tenderize the meat and infuse it with flavor. You can marinate the chicken legs for as little as 30 minutes or up to overnight.
  • Cook the chicken legs over medium heat: Cooking the chicken legs over medium heat will help to prevent them from drying out and becoming tough. Be sure to adjust the cooking time depending on the size of the chicken legs and the type of cooking method you are using.
  • Check the internal temperature of the chicken legs: The best way to ensure that the chicken legs are cooked through is to check the internal temperature with a meat thermometer. The chicken legs should reach an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken legs rest before serving: Letting the chicken legs rest for a few minutes before serving will help the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.

Conclusion:

Tangy chicken legs are a delicious and versatile dish that can be enjoyed for lunch, dinner, or even as an appetizer. With a few simple ingredients and a little bit of time, you can create a dish that is sure to please everyone at the table. So next time you are looking for a quick and easy meal, give tangy chicken legs a try.
