TANGY BROCCOLI SALAD

Tangy Broccoli Salad image

Got this from a friend, but it's a Kraft recipe. A little different, with the addition of fresh spinach. It's been adapted a bit.

Provided by WI Cheesehead

Categories     Spinach

Time 20m

Yield 8 serving(s)

Number Of Ingredients 9

1/2 cup Miracle Whip light or 1/2 cup light mayonnaise
2 tablespoons white sugar
2 tablespoons vinegar
6 cups broccoli florets, chopped small
4 cups loosely packed fresh spinach leaves
1/2 lb bacon, crisply cooked and crumbled
1/2 cup red onion, cut into strips
1/4 cup raisins
1 egg, hard boiled and chopped

Steps:

  • Mix dressing, sugar and vinegar in large bowl.
  • Add remainig ingredients and mix lightly.
  • Refrigerate.

Tips:

  • Choose fresh, tender broccoli: Look for broccoli with deep green florets and firm, tightly closed buds. Avoid broccoli with yellow or wilted florets, as these signs of age and poor quality.
  • Blanch the broccoli briefly: Blanching helps preserve the broccoli's vibrant color and crisp texture. To blanch the broccoli, bring a large pot of salted water to a boil, add the broccoli florets, and cook for 1-2 minutes, or until the florets are bright green and tender-crisp. Immediately transfer the broccoli to a bowl of ice water to stop the cooking process.
  • Use a variety of nuts: This recipe calls for almonds, but you can use other nuts or seeds, such as walnuts, pecans, cashews, or sunflower seeds. If using nuts, toast them in a dry skillet over medium heat until fragrant and golden brown.
  • Make the dressing ahead of time: The dressing can be made up to 3 days in advance and stored in the refrigerator. When ready to serve, whisk the dressing until smooth and emulsified.
  • Serve the salad immediately: This salad is best enjoyed immediately after it is made, as the broccoli will start to wilt if it sits for too long. If you do need to make the salad ahead of time, store the broccoli and dressing separately and assemble the salad just before serving.

Conclusion:

This tangy broccoli and almond salad is a delicious and refreshing side dish that is perfect for any occasion. The broccoli is blanched to preserve its vibrant color and crisp texture, and the almonds add a crunchy contrast. The dressing is made with a combination of olive oil, vinegar, honey, and Dijon mustard, and it perfectly complements the flavors of the broccoli and almonds. This salad is sure to be a hit at your next potluck or party.
