1/2 cup chopped green pepper
1/2 cup chopped onion
2/3 cup water
1 envelope taco seasoning
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) Mexican diced tomatoes, undrained
6 flour tortillas (8 inches)
1 can (16 ounces) refried beans
3 cups shredded Mexican cheese blend

Steps:

  • In a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Add water and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Stir in black beans and tomatoes. Simmer, uncovered, for 10 minutes., Place 2 tortillas in a greased 13x9-in. baking dish. Spread with half of the refried beans and half of the beef mixture; sprinkle with 1 cup cheese. Repeat layers. 4 boneless skinless chicken breasts, cut into 1/4-inch strips
½ cup lime juice
2 (1 ounce) packets taco seasoning mix (such as Old El Paso®)
1 ½ cups shredded mozzarella cheese, divided
1 cup sour cream
1 cup salsa
salt and ground black pepper to taste
1 (8 ounce) package no-boil lasagna noodles, or to taste

Steps:

  • Combine chicken, lime juice, and taco seasoning in a large bowl. Stir to make sure chicken is evenly covered.
  • Cook chicken mixture over medium heat until firm, about 15 minutes.
  • Mix 1/2 cup mozzarella cheese, sour cream, and salsa in a bowl. Season with salt and pepper.
  • Put a few spoonfuls of the sour cream mixture in the bottom of a 9x9-inch baking dish. Layer noodles and chicken on top. Cover with remaining 1 cup mozzarella cheese.

2 (14 1/2-oz.) cans diced tomatoes with zesty mild green chiles, undrained
1/4 cup taco sauce
3 cups cubed cooked chicken
1 (16-oz.) can Old El Paso™ Refried Beans
1/2 cup sour cream
12 uncooked lasagna noodles
12 oz. (3 cups) shredded colby-Monterey Jack cheese
1/2 cup chopped green onions
1/4 cup sliced ripe olives, if desired
2 tablespoons chopped fresh cilantro

Steps:

  • Spray 15x12-inch sheet of foil and 13x9-inch (3-quart) glass baking dish with nonstick cooking spray. In large bowl, combine tomatoes and taco sauce; mix well. Stir in chicken. In medium bowl, combine refried beans and sour cream; mix well.
  • Spread about 1 cup chicken mixture in bottom of sprayed baking dish. Top with 4 uncooked noodles, breaking to fit if necessary. Spread with half of bean mixture and 1 1/2 cups chicken mixture. Sprinkle with 1 cup of the cheese, half of the onions and half of the olives.
  • Layer 4 more noodles, remaining bean mixture, 1 1/2 cups chicken mixture and 1 cup cheese. Top with remaining 4 noodles, chicken mixture, onions, olives and cheese. (Be sure top noodles are covered.) Cover with foil, sprayed side down. Refrigerate at least 8 hours or overnight.
  • Heat oven to 350°F. Bake covered lasagna for 50 minutes. Uncover baking dish; bake an additional 18 to 22 minutes or until bubbly and thoroughly heated. Let stand 10 minutes before serving. Sprinkle with cilantro. If desired, garnish each serving with dollop of sour cream, chopped tomato and shredded lettuce.

  • Preheat oven to 350°. Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning. In a small bowl, combine egg whites and ricotta cheese. Drain noodles., In each of two 13x9-in. baking dishes, layer 4 noodles, 2/3 cup ricotta mixture, half the beef mixture and 1-1/3 cups cheddar cheese. Top each with 4 noodles, 2/3 cup ricotta mixture, 1-1/3 cups salsa and 1-1/3 cups cheese. For final layer, top each with 4 noodles, 2/3 cup ricotta mixture, 1-1/3 cups salsa and 1-1/3 cups cheese., Bake, uncovered, 35-40 minutes or until heated through. 1 pound ground beef sirloin
2 tablespoons chili powder
Kosher salt
Two 16-ounce jars salsa
1 pound no-boil lasagna noodles
Two 16-ounce packages part skim mozzarella, cut into 1/2-inch pieces
1/2 cup sour cream
1/2 small head iceberg lettuce, shredded
1 large beefsteak tomato, diced
1/2 cup shredded sharp Cheddar
1/2 cup crushed tortilla chips

Steps:

  • Position an oven rack in the middle of the oven and preheat the oven to 350 degrees F.
  • Heat the oil in a large skillet over medium-high heat until shimmering but not smoking. Add the ground beef and sprinkle with the chili powder and 1 teaspoon salt. Cook, breaking apart chunks of meat with the back of a spoon, and stirring often, until meat is crumbled and browned, 5 to 6 minutes. Stir in the salsa and 1 cup of water, bring to a simmer and cook until slightly reduced, about 4 minutes. Remove from the heat and set aside.
  • Spread a quarter of the meat sauce over the bottom of a 9- by 13-inch baking dish. Lay a third of the noodles over the sauce, overlapping slightly and breaking them to fit, if needed. Leave a 1/2-inch space around the edges of the baking dish. Top the noodles with another quarter of the meat sauce and a third of the mozzarella. Make another layer with a third of the noodles, a quarter of the meat sauce and a third of the mozzarella. Repeat, making a final layer with the remaining third of the pasta and quarter of the sauce, making sure that the top layer of noodles is completely covered in sauce. Top with the remaining third of the mozzarella.
  • Cover loosely with foil and bake until the cheese is melted and bubbling and the noodles are tender when pierced with a knife, about 1 hour. Remove the foil and cook 15 minutes more. Let rest 10 minutes. Dollop with sour cream and sprinkle with lettuce, tomato, Cheddar and chips.

18 corn tortillas

1 pint sour cream
1 tablespoon chili powder
3 cups shredded monterey jack cheese
3 cups shredded cheddar cheese

Steps:

  • Preheat oven to 375.
  • Mix chili powder and sour cream.
  • Set aside.
  • Cook and drain the ground beef.
  • Add taco mix, garlic, cayenne, and water.

"TACO-LASAGNA" OR NACHO CASSEROLE

1/2 cup - cooked taco seasoned meat (ground beef or turkey, grilled chicken, vegetarian chorizo, or skip this if you're vegetarian)
1 cup - shredded cheddar cheese (I use spicy cheddar)
1/2 cup - chopped fresh spinach or cilantro
1/2 cup of fresh tomato, diced
1/2 cup salsa (I like Primavera chipotle salsa)
1 can beans, rinsed and drained (black beans or pinto)
10 corn tortillas, cut into large-bite-size pieces (or substitute with corn tortilla chips or whatever you have on hand--tonight I used 4 corn tortillas and a package of prepared polenta)

Steps:

  • -Pour 1 tsp canola or olive oil into a 9x9 baking pan. Spread it around to grease the bottom and sides. -Cover bottom of pan with one layer of tortilla pieces. -Sprinkle salsa on the tortilla pieces In the pan. -Sprinkle a layer of 1/2 of the beans. Layer 1/2 of the meat, then 1/2 of the spinach, 1/2 the tomatoes, 1/3 of the salsa, 1/3 of the cheese, 1/3 of the tortilla pieces. -Layer the rest of the beans, meat, spinach and tomatoes. -Layer 1/2 of the remaining salsa, tortilla pieces, and cheese. -Top with the remaining tortilla pieces, salsa, and cheese. -Bake at 375 degrees for 25-30 minutes. Notes: It's a great way to use leftovers from "taco night" or steak that you brought home from a restaurant. Make it work for you--try shortcuts. For instance, you could substitute chili for all the ingredients except tortillas and cheese. Go ahead and add/remove/substitute ingredients with things you prefer. If you like it spicy, dice 1-3 jalapenos and toss them in. We usually put two jalapenos in our taco meat. This recipe is very flexible. I usually use ground beef (seasoned with chili powder, garlic powder, oregano, cumin, paprika, salt and pepper), chopped fresh spinach (Erik doesn't like cilantro), pinto beans, and the other ingredients I listed. Funny, I made a casserole tonight in order to make tomorrow's supper easier. We had no beef so I simply made it with beans. You could throw in anything you like in your burritos or enchiladas. I think this casserole tastes just like enchiladas.
