1/2 lb hamburger
1 tablespoon flour
8 ounces refried beans

2 -3 tablespoons hormel no-bean chili
1 cup medium cheddar, shredded
2 -3 flour tortillas, thin ones are best

Steps:

  • Warm tortillas on a griddle. Keep warm.

  • Add an equal or greater amount of cheese. More cheese than chili tastes most like Taco Bell's version.

TACO CHILI FRIES

1 16 oz bag frozen french fries
2 lb lean ground beef
1 1/2 c water
2 packets ortega taco seasoning mix
1 c ortega salsa
1 15 oz can joan of arc black beans, drained
1 6 oz can sliced black olives, drained
1 4 oz can ortega diced green chiles
2 c shredded cheddar cheese
1 c sour cream

Steps:

  • 1. Follow package directions for baking fries. Set aside.
  • 2. Brown ground beef in medium skillet over medium-high heat. Stir in water and seasoning mix. Cook for 5 minutes. Remove from heat.
  • 3. Spoon salsa, beans, olives, chiles, cheese and sour cream, into separate bowls. Place fries in large bowl near meat mixture and toppings. Using heat-resistant ceramic plates, allow guests to create their own chili fries with meat and toppings.
  • 4. Place ceramic plate under broiler about 4 minutes or until fries reheat and cheese melts. Top with sour cream. Serve immediately.

1/2 lb ground sirloin
1 (15 ounce) can hot chili beans
1 (16 ounce) can fat-free refried beans
1 (15 ounce) can dark red kidney beans, drained and rinsed
1 (15 ounce) can corn, drained
1 (14 ounce) can petite diced tomatoes with jalapenos (or green chilies)
1 (1 ounce) envelope ranch dressing mix (not buttermilk)
1 (1 1/4 ounce) envelope taco seasoning
1 medium chopped onion
1 cup water
jalapeno
sour cream
cheese
onion
crushed tortilla chips
hot sauce

Steps:

  • Brown meat and onion together.
  • Add water and seasoning envelopes.
  • In a large pot, combine all five cans with the meat and mix thoroughly.
  • Simmer for 30-45 minutes.

1 can (14-1/2 ounces) stewed tomatoes, cut up
3/4 cup canned kidney beans, rinsed and drained
3/4 cup frozen corn, thawed
2 tablespoons taco sauce or salsa
1 tablespoon chopped green chilies
1 to 1-1/2 teaspoons chili powder
Dash garlic salt
Dash onion salt
Crushed tortilla chips, shredded cheddar cheese and sour cream

Steps:

  • In a large saucepan, cook beef over medium heat until no longer pink; drain. Add the tomatoes, kidney beans, corn, taco sauce, chilies, chili powder, garlic salt and onion salt. Bring to a boil. 1 can (14-1/2 ounces) stewed tomatoes, undrained
2 tablespoons taco seasoning
1 tablespoon sugar
1 tablespoon molasses
CRUST:
4-1/2 cups all-purpose flour
4 teaspoons sugar
2 teaspoons salt
2 cups cold butter
12 to 14 tablespoons cold water

  • In a skillet, cook the beef, mushrooms and onion over medium heat until meat is no longer pink; drain. Stir in the next eight ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 20-30 minutes., Meanwhile, combine the flour, sugar and salt in a bowl. Cut in butter until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide into fourths; flatten each portion into a circle. Cover with plastic wrap. Refrigerate for 30 minutes., Line two 9-in. pie plates with pastry. Divide beef mixture between crusts. Roll out remaining pastry to fit tops of pies; place over filling. Trim, seal and flute edges.
