1 lb. lean ground beef
1 small onion, diced ((or about 1 cup of frozen pre-diced onion for a shortcut))
2 cans (10.75 ounces each) condensed tomato soup, NOT diluted
1 cup milk
1 (1 ounce) packet taco seasoning mix
½ teaspoon salt
4 cups cooked rice ((I use 2 packets of Uncle Ben's Ready Rice microwaved according to package instructions))
1 (14.5 ounce) can petite diced tomatoes, NOT drained
1 (11 ounce) can corn with red and green bell peppers, drained
1 cup grated cheddar cheese
1 cup crushed tortilla chips
Optional garnish: chopped fresh parsley, green onions, or cilantro

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.

1 green bell pepper (minced)
1 can diced tomatoes, undrained ((14.5 ounces))
1 cup water
1/2 cup salsa
3/4 cup uncooked long grain rice
1/2 cup chili sauce
1 teaspoon salt
1 teaspoon brown sugar
1/2 teaspoon ground cumin
1/2 teaspoon Worcestershire sauce
ground black pepper (to taste)
1 can refried beans ((15 ounce))
1/2 cup shredded cheddar cheese
2 Tablespoons chopped fresh cilantro
1/2 cup sliced cherry tomatoes

Steps:

  • Preheat oven to 375 degrees F.

1 pound ground beef
1 envelope taco seasoning, divided
2-1/2 cups water, divided
1 package (6.8 ounces) Spanish rice and pasta mix
2 tablespoons butter
1 can (14-1/2 ounces) diced tomatoes, undrained
6 flour tortillas (10 inches)
2 cups shredded cheddar cheese, divided
1 can (8 ounces) tomato sauce
Diced avocado, sliced ripe olives, shredded lettuce, sour cream and/or taco sauce

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Set aside 1 tablespoon of taco seasoning; add remaining seasoning to beef. Stir in 3/4 cup water; cover and simmer for 15 minutes. , Meanwhile, in a large saucepan, saute rice mix in butter over medium heat until golden brown.
