1 (8 ounce) package thin spaghetti
1/4 cup sesame oil, divided
2 large red bell peppers, cut into julienne strips
4 green onions, cut into 1 inch pieces
2 cloves garlic, minced
1 (10 ounce) bag fresh spinach, torn into bite-size pieces

1 (8 ounce) can sliced water chestnuts, drained
1/4 cup soy sauce
2 tablespoons rice vinegar
1 1/2 teaspoons crushed red pepper flakes
1 -2 teaspoon minced fresh gingerroot

  • Put spaghetti in a large bowl; set aside.
  • In a big skillet, heat 2 tablespoons sesame oil.
  • Add red pepper strips, green onions, and garlic; saute and stir occasionally for 2 minutes.
  • Stir in spinach; cover and cook over medium heat for 3 minutes or until spinach is wilted.
  • Remove skillet from heat and let cool.
  • Spoon spinach mixture over spaghetti.
  • Add in the chicken and water chestnuts.
  • In a small bowl, combine 2 tablespoons sesame oil, and the remaining ingredients; stir to combine.
  • Pour over pasta/spinach/chicken; gently toss to coat.
  • Serve immediately.

Tips:

  • Mise en place: As with all cooking, having all your ingredients prepped and measured before you start cooking will make the process much smoother and enjoyable.
  • Use authentic ingredients: If you can find them, using authentic Chinese ingredients will give your dish the best flavor. This includes things like Sichuan peppercorns, chili oil, and fermented bean paste.
  • Don't be afraid of the heat: Sichuan food is known for its bold flavors, so don't be afraid to add some heat to your dish. However, you can always adjust the amount of chili oil or peppercorns to suit your own taste.
  • Use a wok: A wok is the traditional Chinese cooking vessel for stir-frying. It allows you to cook food quickly and evenly over high heat.
  • Cook the noodles properly: The noodles should be cooked until they are just al dente, or slightly firm to the bite. This will help them hold their shape and texture when you stir-fry them.
  • Don't overcrowd the wok: When stir-frying, it's important to not overcrowd the wok. This will cause the food to steam instead of fry, and it will make it difficult to get a good sear on the ingredients.
  • Serve immediately: Sichuan noodle toss is best served immediately after it is cooked. This will ensure that the noodles are still hot and the flavors are at their peak.

Conclusion:

Sichuan noodle toss is a delicious and easy-to-make dish that is perfect for a quick and flavorful meal. With its bold flavors and spicy kick, this dish is sure to please everyone at the table. So next time you're looking for a new and exciting recipe to try, give Sichuan noodle toss a try. You won't be disappointed!
