3 egg whites
1/4 teaspoon cream of tartar
3/4 cup granulated sugar
2 Toblerone chocolate bars, fruit & nut finely chopped (100 g each)
3 tablespoons flour
3 tablespoons icing sugar

Steps:

  • Heat oven to 300°F
  • Beat egg whites and cream of tartar in large bowl with mixer on high speed 3 to 5 minute or until soft peaks form.
  • Beat in granulated sugar, 1 tablespoons at a time, until stiff peaks form.
  • Mix chocolate and flour; gently stir into egg whites.
  • Drop tablespoonfuls of egg white mixture, 1 inch apart, onto 2 parchment paper-covered baking sheets.
  • Bake in top and bottom thirds of oven 24 to 26 minute or until light golden brown, rotating baking sheets after 12 minute
  • Transfer to wire racks; cool completely.
  • Sprinkle with icing sugar.

1 cup softened butter, do not sub
1 cup powdered sugar
2 tsp. vanilla
2 cups flour
1/2 tsp. salt
FILLING:
1 (3 oz.) pkg. cream cheese, softened
1 cup powdered sugar
2 Tbl. flour
1 tsp. vanilla
1/2 cup finely chopped pecans
1/2 cup sweetened flaked coconut
TOPPING:
1/2 cup semi-sweet chocolate chips
2 Tbl. butter
2 Tbl. water
1/2 cup powdered suager

Steps:

  • 1. In a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. Combine flour and salt; gradually add to the creamed mixture and mix well. Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets. Make a deep indentation in the center of each cookie. Bake at 350° for 10-12 minutes or until the edges just start to brown. Remove to wire racks to cool completely. For the filling, in a large bowl, beat the cream cheese, sugar, flour and vanilla until smooth. Add pecans and coconut. Spoon 1/2 teaspoon into each cookie. For topping, in a microwave-safe bowl, melt chocolate chips and butter with water; stir until smooth. Stir in sugar. Drizzle over cookies.
