CHOCOLATE PEANUT SWEETIES

- In a small bowl, beat peanut butter and butter until smooth. Beat in confectioners' sugar until combined. Shape into 1-in. balls; press one on each pretzel. Place on waxed paper-lined baking sheets. Refrigerate until peanut butter mixture is set, about 1 hour. , In a microwave, melt chocolate chips and oil; stir until smooth. Dip the peanut butter ball into chocolate; allow excess to drip off. Return to baking sheet, pretzel side down. Refrigerate for at least 30 minutes before serving. Store in an airtight container in the refrigerator.

PINK SWEETIES (PRETTY PINK ALMOND COOKIES)
These pretty, pink and white swirled, iced almond cookies came from the Woodbine Cottage in Granbury, TX (via my friend, Victoria!). They have a nice almond flavor, they keep well, and they look so pretty! I think they'd be nice for a baby shower, or for Valentine's Day, because of their pink color. (Note: I find this dough to be rather stiff, and recommend using a heavy-duty mixer.)

Steps:
- Cream the butter and sugar, adding eggs, one at a time.
- Add the rest of the cookie ingredients.
- Add a few drops of red food coloring to the dough, and swirl through mixture.

- Flatten balls slightly, and bake for 14 minutes in a 350 degree oven.
