SWEETCORN PIE
A very tasty side dish, that kids of all ages adore. My nephew, who is 33 years old still asks me to make this dish whenever he sees me, after he tasted it for the first time when he was 11 years old! I think I found this recipe in a South African magazine, but I cannot remember as I have been making this for the past 30 years! ***I have updated the recipe - most of the cheese goes into the pie and a little is sprinkled over the top. I have also added microwave instructions for making white sauce

Tips:
- For the best results, use fresh sweetcorn. If using frozen corn, thaw it completely before using.
- If you don't have a food processor, you can grate the corn kernels using a box grater.
- Be sure to drain the corn well after grating or processing it. This will help to prevent the pie from being too watery.
- Use a deep-dish pie plate for this recipe. A 9-inch pie plate will work, but a 10-inch pie plate is ideal.
- If you don't have a pie crust mix, you can use a store-bought pie crust. Just be sure to pre-bake it according to the package directions.
- To prevent the pie from overflowing, place a baking sheet under the pie plate before baking.
- Serve the pie warm or at room temperature. It can be stored in the refrigerator for up to 3 days.
