3 slices bacon, chopped
1 cup chopped onion
1 tablespoon all-purpose flour
¼ cup apple cider vinegar
2 tablespoons sugar
1 teaspoon salt
¼ teaspoon pepper

Steps:

  • Cook bacon in a medium skillet over medium-high heat, stirring occasionally, until well-browned. Add onion and cook until translucent. Stir in flour and cook 2 minutes more.

1 can green beans, rinsed and drained
1 can cut yellow wax beans, rinsed and drained
1 can kidney beans, rinsed and drained
1 can butter beans, rinsed and drained
1 large green bell pepper, diced
1 large red onion, sliced and separated into rings
1 (4-ounce) jar pimentos, diced
1/2 cup salad oil
2 cups thinly sliced celery
1 1/2 cups cider vinegar
2 cups sugar
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 can tomato soup, undiluted

Steps:

  • Place all the beans, green pepper, onion and pimentos in a large mixing bowl. Add the oil and celery. In a saucepan, combine the vinegar, sugar, salt, pepper, and tomato soup. Bring to a boil and pour over the vegetables. Toss the mixture lightly with 2 forks. Do this several times as the mixture cools. Cover the bowl and refrigerate at least 4 hours before serving. The salad will be better if kept chilled 24 hours before serving. Drain and reserve liquid before serving; it will keep for several days. The reserved liquid can be poured over the leftovers. Add more sugar, if desired.

1/4 cup cider vinegar

  • In a large skillet, cook bacon over medium until browned, 3 to 4 minutes per side. With tongs, transfer to a paper-towel-lined plate (reserve skillet with pan drippings).

Often overlooked, this sweat and sour Green Bean Soup tastes just amazing and is totally worth it. Both fresh and frozen green beans can be used, only common ingredients go into it and the whole thing cooks in under an hour. What else could you ask for? :)

500 g fresh or frozen green beans
500 g diced yellow potatoes
2 medium sized yellow onions
3 cloves chopped garlic
100 g diced smoked bacon
500 ml whipping cream or half & half
3 bay leaves
2 tablespoons butter
salt & pepper to taste
1 pinch ground nutmeg
3 tablespoons all purpose flour
olive oil
1 liter chicken broth/stock
1 liter water
4-5 eggs hard boiled and sliced
fresh dill

Steps:

  • Heat up 2 or 3 tablespoons of olive oil and add 2 tablespoons of butter.
  • Once the butter melts, add finely chopped onions and garlic and sautee for a few minutes.
  • Add finely diced bacon and saute for 5 more minutes. You can also use cooked ham for this green bean soup recipe.
  • In the meantime, clean the green beans and dice your potatoes.
  • Add the green beans and potatoes, mix well and sautee for 5 more minutes.
  • Pour in the chicken stock/broth and water. Add 4-5 allspice corns, 3 bay leaves and a generous amount of salt & pepper.
  • Cover the pot and simmer on low for 30 minutes.
  • Use the time to hard boil 4-5 eggs. Once cooked, peel and finely chop these.
  • Once 30 minutes have elapsed, remove the bay leaves from our green bean soup.
  • Mix 3 tablespoons of all purpose flour with 500ml (5 cups) of whipping cream.
  • Whisk the cream & flour mixture into the soup and make sure no lumps are forming.
  • Keep stirring the soup until it thickens, it will take 2-3 minutes as the flour cooks.
  • Add the chopped eggs and fresh dill into the green bean soup now. Season with a pinch of ground nutmeg.
  • Now comes the most important phase, we need to finalize the taste with sugar and vinegar. I've added 5 tablespoons of sugar and 4 tablespoons of vinegar. Please keep in mind that you might have to adjust these amounts based on what sugar, and especially vinegar, you are using. Aim for a balanced sweet & sour taste, where none of them dominates.
  • Simmer for a few minutes so the flavors combine and give the soup a final taste. You will likely have to add more salt, which is usually the case with creamy soups that contain potatoes and this green bean soup is no exception.
  • Once you're happy with the taste, our green bean soup is ready. I'm serving it with fresh bread and some more chopped dill as garnish.

I found several Sweet & Sour Green Bean recipes over the years. Like any cook, I liked certain things about certain ones, and decided to make my own. So, here is the result! But, I dare you to have leftovers; as when you are lucky enough to, they are great cold!

2 (28 ounce) cans green beans, Drained
1 1/2 cups sugar
2 large white onions, Sliced Into Rings
1 (16 ounce) package cheap bacon (Usually They Are About A Pound Or So)
1 1/2 cups white vinegar
1 dash garlic
3 tablespoons slivered almonds

Steps:

  • Fry BACON and remove from fat.
  • Mix SUGAR, VINEGAR and GARLIC; add to hot BACON FAT.
  • Cook mixture for about 5 minutes over medium high heat.
  • Place BEANS in a shallow baking dish.
  • Sprinkle ALMONDS over BEANS.
  • Place ONION rings on top of ALMONDS.
  • Crumble BACON over the top of the ONIONS.
  • Pour SUGAR/VINEGAR/GARLIC/BACON FAT mixture over the top of the BACON.
  • Bake at 250 degrees for 4 hours.
  • For a better presentation, I would drain the liquid off of the beans before serving, or serve the beans in soup bowls. But, keep the liquid, just in case you do reheat the beans.

  • Place beans in a saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain and set aside. , In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 1 tablespoon drippings. In the same skillet, saute onion in drippings until tender., In a small bowl, combine the cornstarch, salt, mustard and water until smooth. Stir into onion.
