Tips:

  • Prep the Meat: Pat the meat dry before applying the rub to ensure the rub adheres well.
  • Apply Rub Generously: Don't be shy with the rub! Apply it liberally all over the meat, creating a nice crust.
  • Let the Rub Work Its Magic: Allow the rub to sit on the meat for at least 30 minutes, or up to overnight, to allow the flavors to penetrate.
  • Cook Low and Slow: For best results, cook the meat at a low temperature for a longer period of time. This helps the rub caramelize and develop its full flavor.
  • Use a Variety of Woods: Experiment with different types of wood chips or chunks for smoking to create unique flavor profiles.
  • Don't Overcrowd the Smoker: Make sure to leave enough space between the pieces of meat so that the smoke can circulate properly.
  • Monitor the Temperature: Keep an eye on the internal temperature of the meat to ensure it reaches the desired doneness.
  • Let the Meat Rest: After cooking, let the meat rest for a few minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful dish.
