1 pound sweet potatoes (about 2 medium), peeled and cut into 1-inch cubes
1/4 cup red wine vinegar
1 tablespoon spicy brown mustard
1-1/4 teaspoons salt
1/2 teaspoon pepper
1/2 cup reduced-fat mayonnaise
1/4 cup 2% milk
2 celery ribs, chopped
1 small red onion, chopped
1/3 cup minced fresh parsley

Steps:

  • Place red potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-15 minutes. Drain; place in a large bowl. ¼ cup white wine vinegar
¼ cup olive oil
1 clove garlic, minced
¼ cup dill pickle relish
½ cup chopped red onion
⅓ cup mayonnaise
1 pinch ground black pepper
⅓ cup sour cream
½ cup chopped parsley

Steps:

4 large sweet potatoes
1/2 cup olive oil
1/4 cup red wine vinegar
1 medium red bell pepper
2 teaspoons ground cumin
1 tablespoon orange zest
1/2 cup green onion (sliced)

1 Tbsp dried parsley

  • 1. Bring water to a boil in a large pan.
