2 large eggs, lightly beaten
6 cups mashed sweet potatoes (about 4 large)
1/2 cup sugar
1/2 cup butter, softened
1/3 cup 2% milk
1 teaspoon vanilla extract
TOPPING:
1/3 cup butter, melted
1 cup packed brown sugar
1 cup chopped pecans
1/2 cup all-purpose flour

Steps:

  • Preheat oven to 350°. In a large bowl, combine eggs, sweet potatoes, sugar, butter, milk and vanilla. Transfer to a greased 11x7-in. baking dish. In a small bowl, mix butter, brown sugar, pecans and flour; sprinkle over top. Bake, uncovered, 50-60 minutes or until top is browned.

3 cups cooked mashed peeled sweet potatoes, (about 3-4 sweet potatoes)
2/3 cup of 1 (14-ounce) can fat-free sweetened condensed milk
2 egg whites
1/4 cup orange juice
Praline Topping (recipe follows)
For the Praline Topping:
2/3 cup light brown sugar
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup butter, melted
1 teaspoon vanilla extract
1 cup chopped pecans

Steps:

  • 1 Preheat oven 350°F. Coat 2-quart casserole with nonstick cooking spray. 2 In bowl, cream together all ingredients except the topping with potato masher or mixer until blended. 3 To make the Praline Topping: 4 In bowl, mix together brown sugar, flour, and cinnamon. 5 Stir in butter, vanilla, and pecans until crumbly. 6 Transfer to prepared dish and sprinkle with Praline Topping. 7 Bake 40-45 minutes or until thoroughly heated and topping is brown and crumbly.

½ pint heavy cream
¼ pound butter
1 cup packed brown sugar
½ cup all-purpose flour
1 ¼ cups chopped pecans

Steps:

  • Butter one 2 quart casserole dish. Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine the sweet potatoes, sugar, vanilla extract, eggs and cream. Blend well, and spread evenly in casserole dish.
  • Prepare the topping by combining the butter, brown sugar, flour and pecans. Mix until crumbly, and sprinkle over sweet potato mixture.

5 lbs fresh sweet potatoes or 5 lbs yams, boiled, drained, peeled and mashed
2/3 cup sugar
2/3 cup butter, melted

1 cup packed brown sugar
1/3 cup flour
