2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon baking powder
2 cans (8 ounces each) crushed pineapple, undrained
2 eggs
1/2 cup canola oil

Steps:

  • In a large bowl, combine flour, sugar, baking soda and baking powder. In another bowl, mix pineapple, eggs and oil; stir into the dry ingredients just until moistened. , Fill greased or paper-lined muffin cups two-thirds full. 1 (8 ounce) can crushed pineapple, drained
1 teaspoon orange zest
2 eggs
2/3 cup granulated sugar
1/2 cup walnuts, chopped
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 375 degrees F.
  • In a medium bowl, combine sweet potatoes, pineapple, orange zest, eggs & sugar, stirring until well combined, then stir in walnuts.
