SPICY MAPLE ROASTED PORK CHOPS AND SWEET POTATOES

Spicy Maple Roasted Pork Chops and Sweet Potatoes image

This was another successful, tossed-together kitchen creation. It is best described as spicy pork chops surrounded by roasted sweet potatoes coated in a spicy maple glaze. The sweet potatoes turn out soft on the inside and somewhat crispy on the outside, and the pork chops turn out juicy and spicy. DH and I enjoyed eating a bite of sweet potato with each bite of pork chop. I like to leave the skin on my sweet potatoes when roasting due to its nutritional value and crispy texture, but feel free to peel if desired. This truly is spicy. If you desire to tone down the heat, please do use less cayenne pepper.

Time 45m

Yield 6

Number Of Ingredients 13

1 egg, lightly beaten
1 quart heavy cream, divided
salt to taste
ground black pepper to taste
6 boneless pork chops
½ cup quick cooking oats
1 quart vegetable oil for frying
1 tablespoon butter
1 large onion, cut into 1 inch chunks
1 clove garlic, diced
¾ cup maple syrup
6 ounces sliced fresh mushrooms
2 tablespoons chopped fresh basil leaves

Steps:

  • Mix the egg, 3 cups heavy cream, salt, and pepper in a shallow bowl. Season the pork chops with salt and pepper, and dip in the cream mixture. Then dredge in the oats to coat. Repeat to coat chops completely.
  • Heat the oil in a skillet over medium-high heat. Use tongs to place the coated chops in the hot oil, and fry until browned on both sides. Remove from heat, and set aside.
  • Melt the butter in a skillet over medium heat (you may use the same skillet if the oil has been drained), and cook the pork chops, onion, and garlic until onion is tender. Pour in the maple syrup, and mix in mushrooms and basil. Season with salt and pepper. Cover, reduce heat to low, and cook 10 minutes, or until pork chops are done. Remove chops from skillet, reserving sauce.
  • Mix the remaining cream into the skillet with reserved sauce. Bring to a boil. Cook and stir until thickened. Serve over the pork chops.

Tips:

  • To ensure tender and juicy pork chops, choose chops that are at least 1 inch thick. Look for chops that have good marbling, which will help keep them moist during cooking.
  • For a more savory flavor, use a dark maple syrup. Grade B maple syrup has a stronger flavor than Grade A and will add a richer taste to the pork chops.
  • If you don't have maple syrup, you can substitute honey or brown sugar. However, maple syrup will give the pork chops the best flavor.
  • Be sure to cook the pork chops over medium heat. Cooking them over high heat will make them tough and dry.
  • To prevent the pork chops from burning, baste them frequently with the maple syrup mixture.
  • Serve the pork chops immediately with your favorite sides. Some good options include mashed potatoes, roasted vegetables, or a simple green salad.

Conclusion:

Sweet maple pork chops are a delicious and easy-to-make meal that is perfect for any occasion. They are tender, juicy, and full of flavor. The maple syrup glaze gives the pork chops a sweet and savory flavor that is sure to please everyone at the table. Next time you are looking for a quick and easy weeknight meal, give these sweet maple pork chops a try.
