SWEET GREEN BEAN BUNDLES

Categories     Vegetable

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 5

3 (15 ounce) cans green beans
8 slices bacon
allspice
1/3 cup brown sugar
1/4 cup butter

Steps:

  • Reserve juice from green beans (I only use 2/3 of the bean juice).
  • Take ½ slice of bacon and lay 10-12 green beans in middle. Wrap bacon around bundle of beans and weave the toothpick through the bacon to hold it together.
  • Lay bundles in a jellyroll type pan.
  • Mix 1/3 cup brown sugar with bean juice and pour over bean bundles.
  • Pour melted butter over all.
  • Sprinkle allspice on bacon.
  • Bake at 350 for 20 minutes and turn bundles.
  • Sprinkle with allspice and bake 15 minutes.
  • (You can reduce the cooking time and turn the broiler on for a couple of minutes to brown bacon).

Tips:

  • Choose tender green beans: Look for beans that are bright green and snap easily when bent. Avoid beans that are limp or have brown spots.
  • Trim the beans: Remove the tough ends of the beans and any strings that may be present.
  • Blanch the beans: Blanching helps to preserve the color and crispness of the beans. To blanch the beans, bring a large pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are tender-crisp. Immediately transfer the beans to a bowl of ice water to stop the cooking process.
  • Prepare the filling: While the beans are blanching, prepare the filling. This can be anything from a simple mixture of olive oil, garlic, and herbs to a more elaborate filling such as a sautéed mushroom and onion mixture.
  • Assemble the bundles: Place a blanched green bean on a cutting board. Spread a thin layer of filling along the center of the bean. Fold the sides of the bean over the filling to create a bundle. Secure the bundle with a toothpick.
  • Cook the bundles: The bundles can be cooked in a variety of ways. They can be grilled, roasted, or sautéed. If grilling or roasting, preheat the grill or oven to 400 degrees Fahrenheit. Brush the bundles with olive oil and cook for 10-12 minutes, or until they are tender and slightly charred.

Conclusion:

Sweet green bean bundles are a delicious and versatile dish that can be enjoyed as an appetizer, side dish, or main course. They are easy to make and can be customized to suit your own taste preferences. With a little creativity, you can create a variety of different fillings and sauces to complement the green beans. So next time you're looking for a healthy and flavorful dish, give sweet green bean bundles a try!
