3 ears corn, husks and silks removed
Kosher salt
2/3 up white-wine vinegar, plus more if needed
1/4 cup light-brown sugar
2 teaspoons mustard seeds
2 teaspoons coriander seeds
1/2 cup diced sweet onion, such as Vidalia
2 celery stalks, diced (2/3 cup)
1 red bell pepper, ribs and seeds removed, diced (2/3 cup)
1 jalapeño or serrano pepper (ribs and seeds removed for less heat, if desired), minced

Steps:

  • Cook corn in a large pot of generously salted boiling water until crisp-tender, about 2 minutes. Drain; let cool completely. Strip kernels from cobs with a sharp knife.
  • Meanwhile, combine vinegar, 1/3 cup water, brown sugar, mustard and coriander seeds, and 1 teaspoon salt in a saucepan. Bring to a boil over medium-high heat, stirring until sugar dissolves. Stir in onion, celery, and bell pepper. Reduce heat to medium-low; simmer until vegetables are crisp-tender, about 5 minutes. Stir in corn kernels and jalapeño; simmer 1 minute more. Carefully transfer mixture to a 4-cup-capacity or two 2-cup-capacity jars. Top with more vinegar, if necessary. (Liquid should fully submerge corn mixture and reach about 1/2 inch from top.) Let cool completely, then cover and refrigerate until ready to use, up to 1 month or can with our helpful instructions.

3 ears fresh corn, shucked
2/3 cup 1% milk
2 large eggs
1/2 teaspoon salt
1/8 teaspoon cayenne
For relish
3/4 cup corn reserved from flans
6 ounces grape or cherry tomatoes, cut into small dice (3/4 cup)
1/3 cup chopped red onion
1 tablespoon chopped fresh basil
2 teaspoons extra-virgin olive oil
1 teaspoon red-wine vinegar
Special equipment:
4 (4- to 6-ounce) ramekins

Steps:

  • Make flans:
  • Preheat oven to 350°F.
  • Cook corn in a pot of boiling water until tender, about 5 minutes. Drain and cool.
  • Cut off kernels with a sharp knife into a bowl, scraping ears. Reserve 3/4 cup for relish and purée remainder in a blender with milk until smooth. Force corn purée through a fine sieve into a bowl, discarding skins.
  • Whisk together eggs, salt, and cayenne until blended and whisk in corn purée.
  • Pour flan mixture into lightly oiled ramekins and bake in a hot-water bath just until set, about 40 minutes.
  • Remove ramekins from water bath and cool on a rack. Chill until cold, about 2 hours.

1 package cocktail franks
Vegetable oil, for frying

  • In a small bowl combine ketchup and pickled peppers. Mix well and set aside.
  • In a large mixing bowl, combine egg, corn muffin mix, garlic powder, onion powder and milk. In a separate shallow dish add flour. Insert wooden skewers half way into cocktail franks.

1 tsp prepared horseradish
2 c fresh corn kernels (about 4 ears)

1/2 c plum tomatoes, diced

1 Tbsp fresh parsley, chopped

Steps:

  • 1. Stir together vinegar, sugar and salt in a small saucepan. Bring to a boil over medium-high heat; reduce heat to medium and simmer 10 minutes or until reduced to about 1/2 cup. Remove from heat, and let stand 15 minutes. Stir in horseradish.

9 c corn kernals, either fresh or thawed frozen (2 two lb bags if using frozen)
4 c onions, vidalia, chopped
2 c red and green bell peppers, chopped
1 c finely chopped jalapeno peppers (adjust for personal preference)
3 c apple cider vinegar (minimum 5% acidity)
1 1/2 c sugar
1 Tbsp kosher salt
2 tsp dry mustard
1 tsp celery seed
1 tsp tumeric
2 Tbsp red pepper flakes (optional)

Steps:

  • 1. Sterilize jars and keep warm. Immerse lids and rings in very hot water and leave them there until you're ready to use them.
  • 2. Combine corn, onions, bell peppers, hot peppers, vinegar, sugar, salt, mustard, celery seed, turmeric and red pepper flakes (if using) in a large, non-reactive pot. Bring to a boil over medium-high heat. Reduce heat to low and simmer for 15 minutes stirring occasionally.
  • 3. Fill the hot jars with the relish leaving 1" head space, run a small spatula around the inside of the jars to remove air bubbles and wipe rims and jar threads with a damp paper towel. Please lids on jars and tighten rings to fingertip tightness.
  • 4. Lower jars on a rack in the canner using a jar lifter. Make sure the jars are covered with at least 3-4 inches of water. Return to a boil and boil gently for 15 minutes.
  • 5. Remove jars and place on a clean dish towel out of direct sunlight. Let rest for 24 hours. Test jars for seal and refrigerate any unsealed jars. Store sealed jars in a dark cupboard for up to one year.
