Steps:
- Place the rice and cinnamon stick in a large glass bowl and add the 4 cups of hot water. Cover the bowl with a dish or plastic wrap, then let it soak overnight, or at least 8 hours. *Please see NOTES
- The next day, pour the rice, cinnamon, and water into your blender and process until it becomes a smooth, watery paste.
- Using a strainer or sieve, strain the mixture into a wide mouth pitcher, stirring to help the liquid pass through.
- Add the milk (if using), vanilla extract, and the rest of the water. Stir in the sugar, adjusting the amount to fit your taste. Let the drink chill in the refrigerator. Stir the Horchata before serving, since the rice mix tends to settle at the bottom. Serve in glasses with ice cubes.

~ SWEET CINNAMON MEXICAN RICE ~
Not too sweet, and oh so creamy. My family rates this rice right up there with my other rice recipes. It's so easy to make, with just 4 ingredients. The hardest part of the recipe is the waiting... A great ending to any Mexican dish it's great anytime for that matter. Enjoy!

HORCHATA (CINNAMON RICE MILK)
Recently had homemade rice milk in a Mexican restaurant in San Francisco. I talked to a few friends and they told me a few different ways to make it. Here is a simple version (I like to add vanilla, but it is optional). Seriously, it is the best ever - and, it costs just pennies to make!

Tips:
- Use high-quality ingredients: The better the quality of your ingredients, the better your Mexican rice will taste. Use fresh, flavorful vegetables, and high-quality rice.
- Rinse the rice: Rinsing the rice before cooking helps to remove excess starch, which can make the rice gummy. This results in light and fluffy grains, rather than a gloopy mess.
- Toast the rice: Toasting the rice before cooking helps to bring out its flavor and gives the dish a slightly nutty flavor, enhancing the overall taste profile.
- Use a flavorful cooking liquid: The cooking liquid is what gives Mexican rice its flavor. Use a combination of broth, water, and tomato sauce for a well-rounded flavor.
- Add seasonings and spices: Mexican rice is all about the seasonings and spices. Be generous with the cumin, chili powder, garlic, and onion powder. You can also add other spices like oregano, paprika, or cayenne pepper to taste.
- Cook the rice until it is tender: Mexican rice should be cooked until it is tender but still has a slight bite to it. Overcooked rice will be mushy, so keep an eye on it during the cooking process.
- Garnish with fresh herbs: Before serving, garnish the Mexican rice with fresh cilantro, parsley, or green onions. This adds a pop of color and freshness to the dish, making it even more visually appealing.
Conclusion:
Sweet cinnamon Mexican rice is a delicious and easy-to-make dish that is perfect for any occasion. With its vibrant colors, delightful flavors, and enticing aroma, it is sure to be a hit with everyone who tries it. So next time you're looking for a flavorful and satisfying side dish, give this recipe a try. You won't be disappointed!
