Steps:
- Add vegetables to vinegar-sugar-spice mixture and simmer another 10 minutes. Bring to a boil. Then pack, boiling hot, into clean, heated canning jars, leaving only a 1/8 inch head space. Place canning lids and rings on jars and tighten. I usually turn the jars upside down so that all the heat is on the seals. I don't turn them back upright until the jars are completely cool. This recipe doesn't have to sit before it's ready to eat. After it cools, you can start tasting it. You won't be able to tell where the cabbage starts and the onions end. The flavors blend together perfectly.
Tips:
- Choose firm, unblemished vegetables. This will ensure that your chow chow is crisp and flavorful.
- Use a sharp knife to cut the vegetables. This will help to prevent them from bruising.
- Blanch the vegetables before pickling them. This will help to preserve their color and crispness.
- Use a clean, sterilized jar for storing the chow chow. This will help to prevent spoilage.
- Process the chow chow in a boiling water bath for at least 10 minutes. This will help to ensure that it is safe to eat.
Conclusion:
Sweet chow chow is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is a great way to preserve fresh vegetables and enjoy them all year long. If you are looking for a new and exciting recipe to try, I highly recommend sweet chow chow.
