Tips:
- Use fresh, high-quality carrots. This will ensure that your pie has the best possible flavor.
- Grate the carrots finely. This will help them to cook evenly and distribute their flavor throughout the pie.
- Toast the pecans before using them. This will bring out their nutty flavor and make them more fragrant.
- Don't overmix the filling. Overmixing can make the filling tough.
- Bake the pie until the filling is set and the crust is golden brown. A toothpick inserted into the center of the pie should come out clean.
