1-1/2 pounds boneless beef chuck steak, cut into 1-inch pieces
2 medium onions, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium beef broth
1/3 cup dry red wine or additional reduced-sodium beef broth
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1 tablespoon Worcestershire sauce
1 teaspoon salt
3/4 teaspoon pepper
3 tablespoons cornstarch
3 tablespoons cold water
1-1/4 pounds sweet potatoes (about 2 medium), cut into 1-inch cubes
1 pound baby portobello mushrooms, halved
4 medium carrots, cut into 1/2-inch slices
2 medium parsnips, cut into 1/2-inch slices
1 medium turnip, cut into 3/4-inch cubes

Steps:

  • Preheat oven to 325°. In an ovenproof Dutch oven, heat 2 tablespoons oil over medium-high heat. Brown beef in batches. Remove with a slotted spoon., Add remaining oil to pan. Add onions; cook and stir 2-3 minutes or until tender. Add garlic; cook 1 minute longer. Add broth and wine, stirring to remove browned bits from pan. Stir in thyme, Worcestershire sauce, salt and pepper. Return beef to pan; bring to a boil. Transfer to oven; bake, covered, 1-1/4 hours., In a small bowl, mix cornstarch and cold water until smooth; gradually stir into stew. Add sweet potatoes, mushrooms, carrots, parsnips and turnip to pan. Bake, covered, 45-60 minutes longer or until beef and vegetables are tender. If desired, strain cooking juices; skim fat. Return cooking juices to Dutch oven.

½ cup dry red wine
1 tablespoon Worcestershire sauce

Steps:

  • Place celery, sweet potatoes, and carrots in the bottom of a slow cooker.

2 pounds moderately lean (85 percent) ground chuck
2 teaspoons allspice
2 teaspoons cinnamon
2 teaspoons kosher salt, plus more to taste
1/8 teaspoon freshly ground black pepper, plus more to taste
3 tablespoons vegetable oil
6 medium onions, peeled and quartered
4 large waxy potatoes, peeled and cut into eighths
12 ounces pitted prunes
1 large eggplant, quartered lengthwise and cut into 1-inch slices
2 6-ounce cans tomato paste
1/4 cup light brown sugar
3/4 cup lemon juice
1 tablespoon Worcestershire sauce
1 tablespoon tamarind paste (see note above)
Syrian rice for serving (see recipe)

Steps:

  • In a large bowl, combine the chuck, allspice, cinnamon, 1 1/4 teaspoons of the salt and 1/8 teaspoon pepper and use your hands to mix it well.
  • Pour the oil into the bottom of a heavy, 6-quart ovenproof casserole or Dutch oven and place half the onions in the bottom. Place half of the meat over the onions, pressing it down very firmly with your hands. Scatter half the potatoes, prunes and eggplant over the top of the meat. Add the remaining onions to the pot and press the remaining meat over the top of the onions. Scatter the remaining potatoes, prunes and eggplant over the meat.
  • In a large bowl, combine the tomato paste, 2 1/2 cups of water, sugar, lemon juice, Worcestershire sauce, tamarind, 3/4 teaspoon salt and a few grinds of black pepper and mix until smooth. Pour the sauce over the meat and vegetables.
  • Cover the pot and bring it to a boil over medium-high heat. Adjust the heat so that the mixture cooks at a strong simmer. Cook until the sauce is thick and the potatoes are tender but not mushy, about 2 hours. (The dish is often better if prepared a day in advance, refrigerated and reheated in a 350-degree oven before serving.) Season the stew to taste with salt and pepper and serve with Syrian rice.

A recipe from my childhood; Mom found it in a Better Homes and Gardens recipe book from 1977. I prefer the crockpot method, but if you don't have one, you can make this on the stove. There is a note in the cookbook that says she used this recipe to make pot roast in the Crockpot as well.

1 1/2 lbs beef stew meat, cut in 1-inch cubes
2 tablespoons cooking oil
2 medium carrots, shredded (1 cup)
2 medium onions, sliced (1 cup)
1 (8 ounce) can tomato sauce
1/2 cup water
1/4 cup packed brown sugar
1/4 cup vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1 tablespoon cold water
2 teaspoons cornstarch
6 ounces whole wheat egg noodles
poppy seed (optional)

Steps:

  • Brown meat, half at a time, in hot oil.
  • (If cooking on stove top add the next 8 ingredients (carrots through salt). Cover and cook over low heat for 1½ hours or till meat is tender.)
  • If using Crockpot, drain and transfer meat to Crockpot.
  • Add shredded carrot, sliced onion, tomato sauce, ½ cup water, brown sugar, vinegar, Worcestershire and salt. Stir.
  • Cook on high for 6-8 hours.
  • For both stove top and Crockpot methods, at the end of the cooking time add the blended cornstarch and water. Cook and stir until thickened.
  • Cook noodles according to package directions. Serve stew over noodles sprinkled with poppy seed (if using).

1 1/2 lbs beef stew meat, cut in 1-2-inch chunks (I use a chuck roast & cut it up)
1 teaspoon olive oil
1 1/2 cups water
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper
2 medium sweet potatoes, peeled and cut into 2-inch chunks (or 1 large)
2 small onions, thinly sliced
2 garlic cloves, thinly sliced
1/4 cup basmati rice
1/2 cup unsalted peanuts
1/3 cup dried apricot, halved
1/2 lb green beans, trimmed and cut in half
salt & pepper (to taste)

Steps:

  • Season the beef with salt & pepper.
  • Heat the oil over medium high heat and a large skillet.
  • Brown all sides of the beef in batches, transfer browned beef to the slow cooker.
  • Deglaze the skillet with 1.5 cups water and pour the liquid over the beef.
  • Add the spices and stir to combine.
  • Layer the onions, garlic, and sweet potatoes over the beef.
  • Cook on the low setting for 4 hours or until the beef is tender, and the sweet potatoes are easily pierced with a fork but retain their shape.
  • Meanwhile, toast the rice in a small skillet over medium-high heat until just browned.
  • Transfer to a plate or bowl to cool.
  • When cool, run through a spice mill or coffee grinder until it is a fine powder.
  • Also grind half of the peanuts.
  • Coarsely chop the other half of the peanuts.
  • Add the powdered rice and ground peanuts to the cooker and stir gently, taking care not to smash the potatoes.
  • Bring a small pan with 1" water in the bottom to a boil.
  • Add the apricots and green beans.
  • Cook until the green beans are bright green and still slightly crisp (about 5 minutes).
  • Drain and stir the beans & apricots into the stew.
  • Season with salt & pepper to taste.
  • Serve sprinkled with the chopped peanuts.

2 large sweet potatoes
1 teaspoon smoked paprika
1 teaspoon oregano
½ teaspoon ground cumin
½ teaspoon salt, or to taste
½ teaspoon fresh ground black pepper
2 tablespoons vegetable oil, or as needed
2 ½ pounds beef stew meat, cubed
½ cup chopped onion
1 cup beef broth
1 (12 ounce) bottle Mexican guajillo red chile cooking sauce (such as Herdez®)
2 tablespoons tomato paste
2 green onions, chopped
⅓ cup light sour cream
1 tablespoon butter
salt to taste

Steps:

  • Place potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer at a low boil until tender all the way through when pierced with a sharp knife, 40 to 45 minutes.
  • Meanwhile, combine paprika, oregano, cumin, salt, and black pepper in a small bowl and set seasoning mix aside.
  • Coat the bottom of a large saute pan with oil and place over medium-high heat. Add beef to the hot oil and sprinkle with seasoning mix. Cook, stirring as needed, until browned on all sides, about 10 minutes. Cook in batches if needed, to avoid overcrowding. Transfer beef to a plate and set aside.
  • Add more oil to the pan if necessary and add onion. Cook and stir until softened, 3 to 5 minutes. Add broth, chile sauce, and tomato paste to the pan. Cook and stir until sauce is well combined and warmed through, 3 to 5 minutes more. Return beef to the pan, bring sauce to a low boil, then reduce heat to low. Cover and simmer stew for 1 hour.
  • Drain sweet potatoes and allow to cool until safe to handle. Remove skins using a paper towel to pull them off and discard. Place sweet potatoes in a large mixing bowl and add sour cream, butter, and salt. Beat using a hand mixer until smooth and creamy.
  • Spoon individual portions of sweet potatoes onto serving plates and top with heaping spoonfuls of stew. Garnish with chopped green onions.

1 1/2 cups frozen mixed red, yellow and green bell pepper blend
1 (14 1/2-ounce) can diced tomatoes, undrained
1 1/2 cups ready-to-serve beef broth
1 teaspoon minced chipotle pepper in adobo sauce
1 teaspoon adobo sauce from chipotle peppers
2 pounds sweet potatoes, peeled, cut into 1 1/2 to 2-inch pieces
1 to 2 tablespoons butter, optional
1 teaspoon minced chipotle pepper in adobo sauce
1 teaspoon adobo sauce from chipotle peppers

Steps:

  • Combine flour, cocoa and ancho chile pepper in large bowl. Add beef and toss to coat evenly with flour mixture. Remove beef and reserve any excess flour mixture.
  • Heat 1 tablespoon butter in stockpot over medium heat until hot. Brown half of beef and remove from stockpot. Repeat with remaining beef, adding remaining 1 tablespoon butter, if needed. Remove beef from stockpot; season with salt and black pepper.
  • Add bell peppers to the stockpot and cook for about 3 minutes, stirring occasionally. Stir in tomatoes, broth, chipotle pepper, adobo sauce and reserved flour mixture. Return beef to stockpot; bring to a boil. Reduce heat, cover tightly and simmer 1 3/4 to 2 1/4 hours or until beef is fork-tender.
  • Meanwhile prepare Chipotle Sweet Potatoes:
  • Place sweet potatoes in large saucepan; cover with water. Bring to a boil; cook 12 to 15 minutes or until tender. Drain, reserving 1/4 cup cooking liquid. Return potatoes and reserved cooking liquid to saucepan; add butter, if desired, chipotle pepper, adobo sauce, salt and ancho chile pepper. Mash potatoes until just blended and slightly chunky.
  • Serve stew over sweet potatoes.

Here is a crock pot stew that I found published in the Minneapolis Tribune many years ago. After you brown the meat and put every thing together, it cooks by itself. I have never met Nancy, but I thank her every time the aroma of this meal in a pot fills my kitchen. It serves at least 4 hungry people and left over's can be refrigerated for several days. After cooking all day, it still retains it's sweet/sour characteristics without either a burned taste or the washed out blandness that often requires more seasoning when served.

2 cups chopped onions

2 lbs lean stewing beef, cut into bite-sized cubes (trimmed of visible fat)
3 carrots, sliced (or 3 cups baby carrots)
2 onions, quartered & seperated
3 medium sweet potatoes or 3 large sweet potatoes, cut into stew-sized wedges
1 bay leaf
1 teaspoon oregano flakes
1/2 teaspoon ground pepper (add more to taste)
1/2 teaspoon salt (optional)
2 1/2 cups low sodium beef broth (add more if necessary)
11 ounces condensed tomato bisque soup

Steps:

  • Preheat oven to 275 degrees.
  • In a oven proof Dutch oven or large casserole pan (with lid), combine all the ingredients EXCEPT the broth and soup,MIXING WELL.
  • In a seperate bowl, blend the broth with the soup and pour over meat mixture.
  • Cover and bake 2 to 3 hours.
  • Check after 2 hours to see if the meat is tender and cooked throughout.
  • If to much liquid has evaporated, add a cup or two more of beef broth, stir the mixture and bake and additional 15 minutes.
  • NOTE: When making this stew I used V-8 instead of tomato bisque. Also mixed 2 tablespoons cornstarch with 1/4 cup water to thicken broth for gravy.

1 large onion, diced

1 cup tomato bisque soup (I use Amy's Creamy Tomato Bisque)
sea salt (to taste)

1 pinch pumpkin pie spice
1 pinch red pepper flakes (optional)

Steps:

  • - Heat 2 T olive oil on medium high heat in a large heavy stew pot or dutch oven. Add the stew meat in a single layer and brown on all sides. Remove from pan and set aside (along with any juices).
  • - Heat remaining Tbsp of olive oil on medium heat. Add the onion, celery, and carrots. Cook until the onion is translucent, about 5 minutes.
  • - Add sweet potato, water, bouillon, stew meat, and tomato bisque. Stir and bring to a boil.

1/4 teaspoon pepper
1 1/2 teaspoons olive oil or 1 1/2 teaspoons vegetable oil
3 cups peeled sweet potatoes, cut in 1 inch pieces (can substitute squash)
2 teaspoons finely chopped garlic
1 dry bay leaf
1 cinnamon stick
1 large onion, cut into eighths
1 (28 ounce) can Italian-style tomatoes, with juices
8 dried apricots, cut in half
chopped fresh parsley

Steps:

  • Remove excess fat from beef.
  • Cut beef into 1-inch pieces and sprinkle with salt and pepper to taste.
  • Heat oil in 10-inch skillet over medium-high heat.
  • Cook beef in oil about 5 minutes, stirring occasionally, until brown.

1/2 cup peeled thinly sliced gingerroot (about 2 ounces)
3 dried New Mexico chiles, soaked, seeded and deveined
3 garlic cloves, coarsely chopped
1 large shallot, coarsely chopped
1/2 cup water
5 tablespoons vegetable oil
3 tablespoons sugar
2 tablespoons fish sauce
1 tablespoon mushroom soy sauce
1 teaspoon salt
1 teaspoon fresh ground pepper
1 cup chicken broth
1 cup green coconut juice
1/4 cup tamarind juice
fresh cilantro stem, for garnish
cucumber, slices

Steps:

  • Put the beef in a medium bowl. Grind the ginger slices with a mortar and pestle, adding them a few at a time until you have extracted most of the juice, or use a mini-chop to make a wet paste. Squeeze the juice from the fibers (you should have 1 1/2 to 2 tablespoons) and stir it into the beef; discard the ginger solids. Let the beef marinate for at least 10 minutes.
  • Meanwhile, make the paste: Blend all the ingredients in a blender until smooth, 2 to 3 minutes.
  • Heat the oil in a large pot over medium-high heat. Add the paste and cook, stirring occasionally, until the flavors are released, about 2 minutes. Stir in the beef, sugar, fish sauce, soy sauce, salt, pepper and broth. Bring to a boil, reduce the heat to low and simmer, partially covered, until the liquid is reduced by half, about 40 minutes.

1 c sliced onion
8 oz tomato sauce(1 cup)

4 tsp cornstarch

1 lb stew meat (I cut this into smaller 1/2" chunks) Top round steak is good
1/3 c flour
1 t paprika
1/2 t ground thyme
1/2 t salt
1/4 t pepper
For the Stewp:
2-3 c beef broth
1 T molasses
2 bay leaves
For the sweetness:
1.5 c diced sweet potato, peeled & cut into roughly 1/4" cubes (one medium sweet potato)
1 c carrot, peeled & cut into 1/2" pieces (about 2 medium carrots)
3/4 c celery, cut into 1/2" pieces ( about 2 stalks trimmed)

Steps:

  • Place the flour and spices in a large Ziploc bag and mix together. Add the meat and shake to coat thoroughly. Using 1.5 T oil added bit by bit, heat a large skillet. Add a third of the coated meat and brown on all sides. Place the browned meat in a stock pot and then repeat the process with the rest of the meat adding the remaining oil to the pan as needed. You are just searing the meat you are not trying to cook it all the way through... it is okay if parts are still uncooked! Add the beef broth to cover the meat. Stir in the molasses and add the bay leaves. Heat the mixture up to a boil and then turn down to a simmer and cover the pot. Simmer this for 1 hour. After the stew has simmered for 1 hour, add the sweet potato, carrots and celery. Return the stew to a steady simmer, cover, and cook for about 45 minutes. Remove the bay leaves and season the stew to taste with additional salt and pepper. Makes 4 good sized portions at 358 calories a serving.
