Steps:

  • In a 1-1/2 qt. baking dish coated with cooking spray, combine the first 10 ingredients. Cover and bake at 350° for 40 minutes. , Stir in the tomatoes and salt. 2 teaspoons fresh grated ginger
2 cups water
1 cup chopped onion
3 cloves garlic, minced
1 cup peeled and diced carrot
2 teaspoons vegetable oil
1 bell pepper, seeded and diced
1 small zucchini or 1 small yellow squash, diced
1 tomatoes, chopped
2 tablespoons soy sauce
2 tablespoons rice vinegar
cooked rice
chopped scallion

Steps:

  • Rinse the lentils. Combine them in a saucepan with the apple juice, ginger and water.
