MEAT
2 lb boneless skinless chicken thighs (not breasts)
TERIYAKI MARINADE
1 c low sodium soy sauce
2 clove garlic minced
2 tsp ginger
4 Tbsp brown sugar
1 whole lemon or lime thinly sliced
4 Tbsp oil
2 Tbsp dried minced onion
1 tsp black pepper
SWEET AND SOUR ONIONS AND PEPPERS
1 Tbsp oil
3 c sliced onions in 1/4 inch (about 3 onions)
2 red bell peppers sliced 1/4 inch slices
2 green bell peppers sliced 1/4 inch slices
4 Tbsp apple cider vinegar
4 Tbsp sugar
GARNISH
fresh parsley or cilantro for garnish

Steps:

  • 1. 8-24 hours before cooking, whisk together marinade ingredients.
  • 2. Marinate chicken thighs.
  • 3. Prepare grill to medium-high heat.
  • 4. Put oil for veggies into a large foil pan.
  • 5. Add all of the sliced onions and peppers. DO NOT ADD vinegar and sugar yet! Put foil cover over this veggie pan.
  • 6. Saute veggies in pan. Cover grill. Check and stir/turn periodically. Let veggies soften and start to brown just a bit.
  • 7. Put marinated chicken thighs on grill. These don't take too long... maybe 5 minutes on each side. Make sure they get glazy/crispy on the outside. But don't cook too long.
  • 8. Put to the side or on a top rack when you think they are done.
  • 9. Combine the vinegar and sugar.
  • 10. To the browned/sauteed veggies add vinegar and sugar, lighty mix.
  • 11. When sugar is melted and everything is mixed, add grilled chicken thighs... nestle them into the veggies. Cover grill and heat for 3-5 minutes.
  • 12. Sprinkle fresh parsley or cilantro on top for garnish (if desired) and serve!

2 quarts water (room temperature or cool water, not warm or hot)
1/3 cup coarse, kosher salt (use half the amount for table salt)
1/4 cup packed light or dark brown sugar
1/4 cup soy sauce
6 thin cut chicken breasts (about 2 pounds (or use 3-4 thicker chicken breasts and cut them in half lengthwise or pound thin))
1 cup granulated sugar
1/2 cup ketchup
1 cup apple cider vinegar
2 tablespoons soy sauce
1 teaspoon garlic powder

Steps:

  • For the chicken, prepare the brine by whisking together the water, salt, brown sugar and soy sauce in a large bowl until the sugar and salt are mostly dissolved.
  • Cut each chicken breast into 2-inch strips (so about two strips per chicken breasts, depending on the size of the chicken breasts) and submerge all the chicken pieces fully in the brine mixture. Cover the bowl and refrigerate for at least two hours (or up to four hours). Any longer than four hours and the chicken may be too salty.
  • For the sauce, whisk together all the sauce ingredients in a medium saucepan and bring the mixture to a simmer over medium-low heat. Let the sauce simmer for about 15 minutes to reduce and thicken slightly (can simmer longer for a thicker sauce), stirring occasionally. There may be a strong vinegar smell as the sauce simmers and the vinegar evaporates - that's completely normal (and the sauce will not taste overly vinegary).
  • Preheat grill to medium heat (on my pellet grill, I preheat to 350 degrees for this recipe). Remove the chicken from the brine and pat dry with paper towels. Discard the brine.
  • Grill the chicken, turning once, until an instant-read thermometer registers 165 degrees F (exact cooking time will depend on what type of grill you have; it takes about 15 minutes total on my pellet grill for thin cut chicken at this temperature). During the last two minutes of grilling brush the chicken liberally with the prepared sweet and sour sauce.
  • Remove the chicken from the grill to a serving platter and drizzle with remaining sauce OR serve the sweet and sour sauce on the side.

1 cup light brown sugar
1/2 head garlic, unpeeled
4 slices fresh ginger root, gently bashed to open up

8 sprigs fresh thyme
2 cups teriyaki sauce
1/4 cup honey
1 large (1-inch) piece fresh ginger root, sliced and bashed to open up
1 head garlic, halved crosswise
1 teaspoon toasted sesame oil, plus 1/2 cup
Freshly ground black pepper
Scallion threads, for garnish
Toasted sesame seeds, for garnish

Steps:

  • Begin by making the brine. Combine the water, brown sugar, garlic, ginger, salt and thyme in a large resealable bag and swirl to dissolve the sugar. Add chicken pieces and allow to brine for 1 to 2 hours in the refrigerator.
  • Preheat grill to low-medium heat.
  • Make teriyaki glaze: In a small saucepan, over medium heat, combine teriyaki sauce, honey, ginger, garlic, and 1 teaspoon of sesame oil, and simmer until rich and slightly reduced.

1 can (8 oz) pineapple chunks, drained

1/2 cup chow mein noodles, if desired

Steps:

  • Heat gas or charcoal grill. Cut four 18x12-inch pieces of heavy-duty foil; spray with cooking spray.
