Time 18m

Number Of Ingredients 8

1 pound green beans, washed and trimmed
4 slices bacon, diced
1/4 cup onion, finely chopped
2 tsbp apple cider vinegar
2 tbsp water
1 tbsp Low carb brown sugar ((or brown sugar for not low carb))
1/4 tsp salt
1 tsp whole grain mustard

Steps:

  • Cook the green beans until tender. I steam mine in the microwave, but use your favorite method. Drain well once cooked.
  • While the beans cook, put the bacon in a medium-large pan over medium heat. Let the bacon cook for 4 minutes until almost crispy. Add the onions and saute until they begin to soften.
  • Add the cider vinegar, water and Sukrin Gold (or brown sugar if not low carb) to the bacon and onions and stir. Reduce slightly. Measure the whole grain mustard into the pan.
  • Lastly, add the green beans and stir to coat and heat through. Season to taste with salt and pepper. I like lots of pepper because it brings out a nice savory flavor. Serve hot.

SWEET AND SOUR GREEN BEANS

Sweet and Sour Green Beans image

Everyday ingredients - bacon, onion, vinegar, and sugar - beget sophisticated results from a one-skillet recipe, submitted here by Suzanne Jenuleson of Medina, Ohio.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 30m

Number Of Ingredients 6

4 slices bacon
1 large onion, chopped
Coarse salt and ground pepper
1 pound green beans, trimmed
1/4 cup cider vinegar
1/4 cup sugar

Steps:

  • In a large skillet, cook bacon over medium until browned, 3 to 4 minutes per side. With tongs, transfer to a paper-towel-lined plate (reserve skillet with pan drippings).
  • Add onion to skillet; season with salt and pepper. Cook, stirring occasionally, until onion starts to brown, 3 to 5 minutes. Add green beans and 1/4 cup water; cook, tossing occasionally, until beans are bright green and tender, about 10 minutes.
  • Crumble bacon into skillet; add vinegar and sugar. Cook until a syrupy sauce forms, 2 minutes, tossing to coat. Serve immediately.

Nutrition Facts : Calories 136 g, Fat 3 g, Fiber 4 g, Protein 5 g

Tips:

  • Choose fresh, tender green beans. Look for beans that are bright green and snap easily when you bend them. Avoid beans that are limp or have brown spots.
  • Trim the beans before cooking. Remove the tough ends of the beans and any strings that run along the sides.
  • Blanch the beans before stir-frying. This will help them retain their color and crispness. To blanch the beans, bring a large pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are bright green and tender-crisp. Drain the beans in a colander and rinse with cold water.
  • Use a well-seasoned wok or skillet. This will help prevent the beans from sticking. If you don't have a wok or skillet, you can use a large saucepan.
  • Stir-fry the beans over high heat. This will help them cook quickly and evenly. Be sure to stir the beans constantly so that they don't burn.
  • Add the sauce to the beans towards the end of cooking. This will help prevent the sauce from burning. Stir the beans and sauce together until the beans are evenly coated.
  • Serve the beans immediately. They are best when served hot and fresh.

Conclusion:

Sweet and sour green beans with bacon is a delicious and easy-to-make side dish that is perfect for any occasion. The beans are tender-crisp and flavorful, and the sauce is sweet, tangy, and slightly smoky. This dish is sure to be a hit with everyone at your table.
