1/4 cup butter
1 large onion, sliced
2 tablespoons minced fresh garlic
2/3 cup red wine vinegar
3/4 cup unsweetened applesauce
3 tablespoons sugar (use white or brown sugar, or to taste)
salt and black pepper
1 head green cabbage, cut into about 1/2-inch strips
2 small apples, peeled, cored and cut into thin slices (you can use only one apple if desired)
1/2 cup apple juice

Steps:

  • Melt the butter in a large pot over medium-low heat.

1 large onion
2 apples, cored and diced
1 cup vegetable stock
1/2 cup red wine (or additional stock)
1/3 cup red wine vinegar
1/3 cup brown sugar, packed
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon pepper
1 pinch ground cloves
1 medium red cabbage, finely shredded (about 10 cups)
1 1/2 teaspoons cornstarch
1 tablespoon cold water

  • In a large saucepan, heat olive oil over medium heat.
