1 spaghetti squash, halved and seeded
1 tablespoon extra-virgin olive oil
salt and freshly ground black pepper to taste
1 tablespoon freshly grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place the squash halves into a large baking dish with the cut-sides facing down.
  • Bake in the preheated oven until easily pierced with a knife, about 40 minutes. Cool squash for 10 minutes.

2 tablespoons butter, softened
2 tablespoons cold butter
¼ cup brown sugar

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Line a large baking dish with aluminum foil.
  • Generously spread the softened butter over the flesh of the squash; lie in the prepared baking dish with the cut sides facing down.
  • Bake in the preheated oven for 30 minutes. Flip the squash and put about half the butter and about half the brown sugar in each of the cavities of the squash halves. Return to the oven until the outer shell is soft, about 10 minutes more. Spoon the flesh of the squash into a bowl to serve.

This sweet and savory and full of cinnamon, brown sugar and cheese and butter, and honey and Italian seasoning- again what's not to like!!! It's quick and easy in the microwave too! 10 minutes in the microwave or 50 minutes in the oven- you choose.

1 large spaghetti squash- (about 4 pounds)
2 tablespoon(s) brown sugar
6 tablespoon(s) butter
1/4 teaspoon(s) good cinnamon
- salt and pepper to taste
1/4 cup(s) grated parmesan cheese
2 cup(s) vegetable broth
1 teaspoon(s) pure honey
1 teaspoon(s) italian seasoning

Steps:

  • For Oven or microwave prepare squash by: Cutting the squash in half lengthwise and remove seeds.
  • For Oven: Preheat oven to 450^. In one squash half, combine brown sugar, 3 Tablespoons butter, cinnamon, salt and pepper. In the other half, combine 2 Tablespoons cheese, 3 Tablespoons butter and salt and pepper.
  • Place both halves in a 9x13-inch baking dish and add the broth to the pan. Cover with foil and bake until tender about 50 minutes. Scrape into strands(still in the shell) Drizzle with honey and Italian seasoning and remaining cheese.
  • For microwave: Cut and seed as above.Combine ingredients same as above for inside the squash in each half. Place in microwave safe dish add the broth and cover with plastic wrap and press to seal it to the dish(so it will steam). Microwave on high for about 10-12 minutes. Remove plastic wrap carefully as the steam will burn you. Scrap as above with remaining directions the same as above. This is the only difference- Place in microwave safe dish, seal with plastic wrap, Microwave for 10 to 12 minutes or until it test tender. Remove from microwave and follow above directions for scraping and seasoning and honey.

1 tablespoon garlic (chopped)
1/2 cup white wine
1/2 cup vegetable broth
1/2 cup apricot preserves
6 dried apricots (pitted and diced)
1/2 cup raisins
1 spaghetti squash
salt and pepper

  • Preheat oven to 350.
  • Prick Squash all over with a fork. Place it in a loaf pan or pie plate (you will need a container to catch the juices). Put it in the oven, with the timer set for one hour.
  • Heat a fry pan on the stove top on high till hot, then turn the heat down to medium high, and in cook the onion till tender
  • Turn the heat down to medium. Then add the garlic, broth, wine, apricot preserves, dried apricots, and raisins to the onions. Simmer till the preserves are well incorporated and the sauces has been slightly reduced.
  • Salt and pepper to taste
  • When the timer goes off it is time to plate out your meal. Cut the squash in half. Use a fork to pull out the fibers of the spaghetti squash. Place about a cup of squash on each place. Top with one fourth of the sauce.
  • Note: To save time and electricity I usually bake my squash when I already have the oven lit to cook another dish. The squash does not absorb the flavor of the other food in the oven.
