DAD'S BASIC MOIST PORK ROAST

Dad's Basic Moist Pork Roast image

This is the best and most basic way to ensure a juicy, perfectly-cooked pork roast every time. This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. If you can swing that, then try your favorite marinade or rub on this recipe. Use your imagination on the rubs and marinades, but ensure you bring your roast directly from the fridge to the roasting pan -- Dad's recipe works best that way.

Please note that this recipe takes ten days of pickling time, but is well worth the effort! This is from "The Frugal Gourmet Celebrates Christmas". I made the entire "Swedish Winter Feast" for a past Christmas and it was wonderful! I'll post the other recipes next: Swedish Sauerkraut, Swedish Green Split Peas with Bacon, Mashed Rutabaga, Turnip, and Potato & Sweet and Hot Mustard, served with Rye Bread. I expected not to like anything and ended up LOVING everything!

Tips:

  • Choose the right cut of pork: Look for a pork loin roast or a pork shoulder roast. These cuts are both flavorful and tender when cooked slowly.
  • Sear the pork before roasting: Searing helps to brown the pork and develop flavor. You can sear the pork in a skillet over medium-high heat for a few minutes per side.
  • Use a flavorful marinade: A marinade can help to add flavor and moisture to the pork. You can use a variety of marinades, such as a simple mixture of olive oil, garlic, and herbs, or a more complex marinade with ingredients like soy sauce, brown sugar, and ginger.
  • Roast the pork low and slow: Pork should be roasted at a low temperature (around 300°F) for a long period of time (about 2-3 hours) to ensure that it is cooked through and tender.
  • Use a meat thermometer: To ensure that the pork is cooked to the proper internal temperature, use a meat thermometer. The internal temperature of the pork should reach 145°F for medium-rare, 155°F for medium, or 165°F for well-done.
  • Let the pork rest before serving: After the pork is roasted, let it rest for 10-15 minutes before slicing and serving. This allows the juices to redistribute throughout the pork, making it more tender and flavorful.
