2 poblano chile peppers or green bell peppers, roughly chopped
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
Cooking spray
1/4 cup mayonnaise
1/4 cup milk
1 tablespoon chili powder
2 cups panko (Japanese breadcrumbs)
1 1/2 pounds pork cutlets, about 1/4 inch thick
Salsa verde and lime wedges, for serving (optional)

Steps:

1 onion, finely minced
6 slices Roquefort cheese (generous slices)

1 medium onion, chopped
2 tablespoons olive oil, divided
1-1/2 teaspoons minced garlic
2 cans (14-1/2 ounces each) diced tomatoes, drained
1 can (15 ounces) black beans, rinsed and drained
3/4 cup chicken broth
1-1/2 teaspoons chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/8 teaspoon crushed red pepper flakes
4 bone-in pork loin chops(1/2 inch thick and 6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked rice
2 tablespoons minced fresh cilantro, optional
