Number Of Ingredients 12

1 c butter, softened
2 c brown sugar, lightly packed
2 eggs
4 tsp vanilla, divided
2 1/2 c flour
1 tsp baking soda
1 tsp salt, divided
3 c oatmeal
2 c semi - sweet chocolate chips
1 can(s) sweetened condensed milk ( 14 ounce )
2 Tbsp butter
1 c chopped, nuts

Steps:

  • 1. Preheat your oven to 350 degrees F. These can be made in a jelly roll pan or I used a 9 x 13 baking dish.
  • 2. Cream butter and sugar.
  • 3. Add flour, soda, and 1/2 teaspoon salt until well mixed; stir in oatmeal. ( Batter will be stiff.)
  • 4. Spread 2/3 mixture onto 10x15x1 inch pan. ( I used a 9 x 13...will just be a thicker bar.)
  • 5. For filling, melt chocolate chips, milk, 2 tablespoons butter, and remaining 1/2 teaspoon salt in small saucepan on medium heat until smooth. Stir in nuts and remaining 2 teaspoons vanilla.
  • 6. Pour over mixture in pan. Spread evenly. Dot with remaining oatmeal mixture.
  • 7. Bake for 20 minutes, or until topping begins to brown. I baked mine 25 minutes, due to using a smaller pan.

Tips:

  • Use a candy thermometer: This is essential for ensuring that the fudge reaches the correct temperature and sets properly.
  • Don't overcook the fudge: If you cook it for too long, it will become grainy and crumbly.
  • Let the fudge cool completely before cutting it: This will help to prevent it from crumbling.
  • Store the fudge in an airtight container at room temperature: It will keep for up to two weeks.
  • For a richer fudge, use dark chocolate or semisweet chocolate chips.
  • To make the fudge even more decadent, add chopped nuts, dried fruit, or marshmallows.
  • If you don't have a candy thermometer, you can test the fudge by dropping a small amount into a glass of cold water. If it forms a soft ball, the fudge is ready.
