SUPER LOW FAT TURKISH APPLE CAKE

Super Low Fat Turkish Apple Cake image

This recipe is a traditional Turkish cake that is great for morning or afternoon tea and its LOW FAT!! You can use canned or fresh cooking apples. I find using canned apples makes the cake moister and generally stays fresh longer. This recipe is great for vegans as it is egg-free and uses unrefined sugar.

Time 50m

Yield 8 serving(s)

Number Of Ingredients 11

3 large eggs
3/4 cup sugar
3/8 cup 1% low-fat milk
3 tablespoons light butter, melted
1 1/2 tablespoons vanilla extract
1 1/2 cups white self-rising flour, sifted
2 tablespoons cornstarch, plus
1 teaspoon cornstarch
1 -2 large green apple, peeled, cored and thinly sliced
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons sugar

Steps:

  • Preheat oven to 400ºF. Coat an 10-inch spring form pan with cooking spray.
  • Beat eggs and 3/4 cup of sugar in a large bowl until light and fluffy. Stir in milk, melted butter and vanilla extract.
  • Combine flour and cornstarch and fold into the cake batter. Pour into prepared pan.
  • Layer apple slices in a circular pattern on top of cake. Combine cinnamon and sugar and sprinkle over apples. Bake for about 28 to 32 minutes or until a toothpick comes out clean when inserted.

Tips:

- Use a food processor to quickly and easily blend the oats into a fine flour. - Make sure to use a large mixing bowl to accommodate all of the ingredients. - For a crispier crust, use a 9-inch springform pan instead of a 10-inch pan. - Do not overmix the batter, as this will result in a tough cake. - Bake the cake until a toothpick inserted into the center comes out clean. - Allow the cake to cool completely before serving.
