Time 13m

Yield 6 serving(s)

Number Of Ingredients 7

5 ears sweet corn, shucked
1/2 cup minced red onion (1 small onion)
3 tablespoons apple cider vinegar
3 tablespoons extra virgin olive oil
1/2 teaspoon salt (or to taste)
1/2 teaspoon fresh ground black pepper (or to taste)
1/2 cup fresh basil leaf, sliced into ribbons

Steps:

  • Cook the ears of corn for about 5-7 minutes in a large pot of boiling salted water.
  • Drain and place into a bowl of ice water to stop the cooking.
  • When corn is cooled, cut kernels off of the cob.
  • Mix corn in a large bowl with red onions, oil, vinegar, salt and pepper.
  • Toss in fresh basil ribbons right before serving.
  • I usually taste to see if more salt and pepper is needed.
  • Can be served cold or at room temperature.

Tips:

  • Select the freshest corn possible. Look for ears with tightly packed kernels and bright green husks. Avoid ears with any signs of damage or discoloration.
  • Cook the corn properly. Overcooked corn will be tough and chewy, so be careful not to boil it for too long. Bring a large pot of salted water to a boil, add the corn, and cook for 3-4 minutes, or until the kernels are tender but still slightly firm.
  • Let the corn cool slightly before cutting it off the cob. This will make it easier to cut and will prevent the kernels from sticking to your knife.
  • Use a variety of fresh vegetables in your salad. This will add flavor, texture, and color. Some good options include tomatoes, cucumbers, bell peppers, onions, and cilantro.
  • Dress the salad with a flavorful dressing. A simple vinaigrette made with olive oil, vinegar, salt, and pepper is a good option. You can also add other ingredients to the dressing, such as herbs, spices, or honey.

Conclusion:

Fresh corn salad is a delicious and refreshing side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. With just a few simple ingredients, you can create a salad that is both healthy and delicious. So next time you are looking for a quick and easy side dish, give this fresh corn salad a try. You won't be disappointed!
