Yield 4 burgers

Number Of Ingredients 13

1/2 medium yellow onion, roughly chopped
1 tablespoon chopped garlic
2 (15-ounce) cans black beans, rinsed and drained, divided
2 tablespoons freshly chopped cilantro leaves
2 teaspoons freshly chopped parsley leaves
1 egg
1/2 teaspoon red pepper flakes
1/2 cup bread crumbs
Salt and fresh ground black pepper
4 hamburger rolls
1 tomato, sliced
4 small Romaine lettuce leaves, or any other type you have on hand
1/4 cup ketchup

Steps:

  • Heat a grill or grill pan over medium-low heat.
  • In a food processor, pulse onion and garlic until finely chopped. Add 1 can black beans, cilantro, parsley, egg, and red pepper flakes and pulse to combine.
  • Transfer mixture to a large mixing bowl, add the remaining can of black beans and the bread crumbs. Season with salt and pepper, to taste, and mix until well combined.
  • Divide 2/3 mixture into 4 portions and form into patties. Save the remaining mixture for another use, like Black Bean Enchiladas. Place on hot oiled grill over medium-low heat and cook about 6 minutes a side or until heated through. Toast hamburger buns on a grill. Place a burger on the bottom of each bun. Top with lettuce, tomato and ketchup. Cover the burgers with the top of the bun and serve.

Time 35m

Yield 4

Number Of Ingredients 15

1 (15 ounce) can black beans, drained and rinsed
⅓ cup chopped sweet onion
1 tablespoon minced garlic
3 baby carrots, grated
¼ cup minced green bell pepper
1 tablespoon cornstarch
1 tablespoon warm water
3 tablespoons chile-garlic sauce (such as Sriracha®), or to taste
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon seafood seasoning (such as Old Bay®)
¼ teaspoon salt
¼ teaspoon ground black pepper
2 slices whole-wheat bread, torn into small crumbs
¾ cup unbleached flour, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Mash black beans in a bowl; add onion, garlic, carrots, and green bell pepper. Mix.
  • Whisk cornstarch, water, chile-garlic sauce, chili powder, cumin, seafood seasoning, salt, and black pepper together in a separate small bowl. Stir cornstarch mixture into black bean mixture.
  • Mix whole-wheat bread into bean mixture. Stir flour, 1/4 cup at a time, into bean mixture until a sticky batter forms.
  • Spoon 'burger-sized' mounds of batter onto the prepared baking sheet, about a 3/4-inch thickness per mound. Shape into burgers.
  • Bake in the preheated oven until cooked in the center and crisp in the outside, about 10 minutes on each side.

Tips:

  • Prepare the Black Beans in Advance: Soaking the black beans overnight or for at least 4 hours before cooking is recommended. This step helps soften the beans and reduces the cooking time.
  • Cook the Black Beans Perfectly: Ensure the black beans are cooked until tender but not mushy. Overcooking can result in a mushy texture, affecting the burger's consistency.
  • Season and Flavor the Black Beans: Add a flavorful blend of spices, herbs, and seasonings to the black beans. This enhances the taste and adds depth of flavor to the burgers.
  • Form the Burgers Properly: When forming the burger patties, gently press them together without overpacking them. This helps keep them delicate and prevents them from becoming dense.
  • Cook the Burgers Thoroughly: Cook the burgers over medium heat, ensuring they are cooked through and slightly browned on the outside while remaining moist and tender on the inside.
  • Assemble the Burgers Creatively: Experiment with various toppings and condiments to create unique and flavorful combinations. Consider adding sliced avocado, salsa, guacamole, or your favorite burger toppings.

Conclusion:

Sunny's Black Bean Burgers offer a delicious and versatile plant-based alternative to traditional beef burgers. With their combination of protein-packed black beans, a symphony of spices, and a delightful array of toppings, these burgers are a healthy and satisfying culinary delight. Whether you're a vegetarian, vegan, or simply seeking a lighter and healthier burger option, Sunny's Black Bean Burgers are a must-try.
