Provided by á-25138

Number Of Ingredients 9

2 slices white bread (I used leftover french bread from dinner the night before. If there is any way you can do this I highly recommend it!)
1 pound breakfast sausage
1 1/2 cups thinly sliced cooked, unpeeled red potatoes
1 1/2 cups mixed cheddar & Monterey Jack cheese, shredded
6 large eggs, lightly beaten
2 cups whole milk
1 teaspoon mustard powder
1/2 teaspoon salt
Black pepper, to taste

Steps:

  • Grease a 2.5-3 quart baking dish (attractive enough to bring to the table) with butter, oil, or cooking spray. Cube the bread and place in the dish in a single even layer. In a large skillet, cook the sausage, breaking it up with a spoon, until it's almost cooked through, about 5 minutes. Drain off the fat. Layer the sausage over the bread, and top with potatoes. Sprinkle the cheese on top. In a medium bowl, whisk together the eggs, milk, mustard powder, salt, and black pepper to taste. Pour the egg mixture over the sausage and potatoes in the casserole. Cover with plastic wrap and refrigerate overnight. When ready to cook the casserole, preheat the oven to 350 degrees fahrenheit. Bake the casserole until set and golden about 30 minutes. Serve hot.

EASY LIKE SUNDAY MORNING BREAKFAST CASSEROLE

Easy Like Sunday Morning Breakfast Casserole image

I found this recipe on the Trader Joe's website, but since it didn't exactly fit my family's tastes, I changed it just a litte bit. Also, Sunday is the beginning of the work/school week here in Israel, so this is usually reserved for Friday morning, which is the start of our weekend. Actually, we have this more often for supper on a Thursday night. But I never heard Lionel Ritchie sing Easy Like Thursday Night, so Sunday morning it is.

Time 35m

Yield 12 serving(s)

Number Of Ingredients 7

1 loaf crusty bread, torn to bits
6 eggs
1/4 cup milk
salt and pepper
sweet paprika
1 cup vegetarian sausage, sliced into 1/2 inch thick rounds
1 cup cheddar cheese, grated

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease a baking pan (I use olive oil).
  • Distribute the bread pieces evenly in the pan. In my house this means tossing to bowl into the pan and just patting everything into place.
  • Beat the eggs with the milk. Add the salt, pepper, paprika and any other spices and herbs that float your boat. Beat again.
  • Pour this over the bread. Aim for an even distribution.
  • Toss the sausage pieces over the bread. Try to be fair and cover the whole dish evenly.
  • Sprinkle the cheese over the whole thing. Again, aim for an even distribution.
  • Bake for 25 minutes or until the top is golden brown. Stick a knife in the center. If it comes out clean, your breakfast is done.
  • Let cool for about 5 minutes until serving.

Tips:

  • Prep Ahead: For a hassle-free morning, consider prepping the casserole the night before. Just assemble everything except the eggs and milk, cover, and refrigerate. In the morning, add the eggs and milk, bake, and enjoy!
  • Adjust Heat: If you prefer a firmer casserole, bake at 350°F (175°C) for 45-50 minutes. For a softer, moister texture, reduce the temperature to 325°F (165°C) and bake for 50-55 minutes.
  • Choose Your Bread: Feel free to experiment with different types of bread. Sourdough, French bread, or even croissants can add a unique flavor and texture to the casserole.
  • Make it Vegetarian: For a meatless option, simply omit the bacon or sausage and add extra vegetables like chopped bell peppers, spinach, or mushrooms.
  • Customize Your Casserole: Don't be afraid to add your favorite ingredients. Diced ham, cooked chicken, or crumbled feta cheese are great additions that will enhance the flavor.
  • Serve with Sides: Pair your breakfast casserole with fresh fruits, yogurt, or a side of crispy hash browns for a complete and satisfying meal.

Conclusion:

This versatile Sunday morning breakfast casserole is a delicious and convenient way to start your day. With its simple ingredients, customizable options, and make-ahead potential, this casserole is perfect for busy mornings, special occasions, or simply enjoying a leisurely breakfast with loved ones. So go ahead, gather your ingredients, preheat your oven, and let the aroma of this savory casserole fill your kitchen as you create a memorable breakfast experience. Happy cooking and happy eating!
