1 jar (7 ounces) oil-packed sun-dried tomatoes
3 medium onions, halved and thinly sliced
3 tablespoons balsamic vinegar
1/2 cup finely chopped red onion
2 tablespoons dried basil
2 teaspoons ground cumin
2 teaspoons ground chipotle pepper
1/2 teaspoon salt
1/4 teaspoon pepper
3 pounds lean ground beef (90% lean)
1 cup crumbled goat cheese
8 hamburger buns, split
Mixed salad greens, optional

Steps:

  • Drain tomatoes, reserving 1/3 cup oil; set aside. In a large skillet, saute sliced onions in 3 Tbsp. reserved oil until softened. Add vinegar. Reduce heat to medium-low; cook, stirring occasionally, until deep golden brown, 30-40 minutes., Meanwhile, chop sun-dried tomatoes and transfer to a large bowl. Add the red onion, seasonings and remaining 7 tsp. of the reserved oil. Crumble beef over mixture and mix lightly but thoroughly. Shape into 16 thin patties. Place 2 tablespoons goat cheese on the center of 8 patties. Top with remaining patties and press edges firmly to seal., Grill burgers, covered, over medium heat until a thermometer reads 160° and juices run clear, 5-7 minutes on each side., Place buns, cut side down, on grill until toasted, 1-2 minutes. 1 cup boiling water
1/2 cup low fat mayonnaise (I used Hellman's Low Fat)
2 teaspoons Worcestershire sauce
1/4 cup fresh basil leaves (coarsely chopped)
2 teaspoons Italian seasoning
2 garlic cloves (minced)
1/2 teaspoon pepper
1/4 teaspoon salt
1 ½ lbs 95% lean ground beef
6 tablespoons shredded 2% mozzarella cheese
6 light whole wheat hamburger buns
Additional fresh basil leaves for topping to taste

Steps:

  • Place the tomatoes in a small bowl and pour the boiling water over them. Let sit for 5 minutes and then drain. Combine drained tomatoes and mayonnaise in a food processor and pulse until blended. Scoop into a bowl and refrigerate until serving.
  • Place the Worcestershire sauce, basil, Italian seasoning, garlic, pepper, salt and ground beef in a large bowl and combine thoroughly. Separate and form the meat mixture into 12 thin patties. 1/2 cup grated onion
3 tablespoons dried basil
2 teaspoons ground cumin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 onions, halved, thinly sliced
1/4 cup balsamic vinegar
8 hamburger buns, toasted

Steps:

  • Line large baking sheet with parchment paper. Mix ground beef, chopped sun-dried tomatoes, 2 tablespoons reserved tomato oil, grated onion, dried basil, ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon pepper in large bowl.
