SUN-DRIED TOMATO BOW TIE SALAD

Sun-Dried Tomato Bow Tie Salad image

A refreshing pasta salad that can also be the main dish. I created this salad once when I needed a potluck dish and was short on time, energy and wanted to use ingredients I had on hand. It was a big hit and the recipe was much requested.

Time 45m

Yield 1 large salad

Number Of Ingredients 7

1 (16 ounce) package bow tie pasta
1/3 cup red onion, thinly sliced
1 (4 ounce) can sliced ripe olives
1 -2 cup cubed cooked chicken breast
Kraft sun-dried tomato salad dressing, 1 bottle
1/2 cup fresh parmesan cheese, finely shredded or grated
salt and pepper

Steps:

  • Cook pasta ala dente and drain.
  • Add remaining ingredients and stir gently.
  • Chill.
  • NOTE: I have also made this salad using diced pepperoni (about 1/2 cup) in place of the chicken.
  • If you use the full 2 cups of chicken it is a great main dish salad, or if you prefer you can omit meat altogether and have it as a side salad.
  • If your store carries two sizes of the bottled dressing, use the bigger size.
  • I don't have any on hand at the moment to check the ounces.
  • Sometimes I also add diced green pepper.

Time 3h35m

Yield 12

Number Of Ingredients 12

1 (16 ounce) package bow-tie pasta (farfalle)
1 (12 ounce) bag broccoli florets
1 (10 ounce) basket cherry or grape tomatoes
1 bunch green onions, sliced
½ cup chopped celery
½ red bell pepper, chopped
½ green bell pepper, chopped
2 cups creamy salad dressing (such as Miracle Whip®)
⅓ cup grated Parmesan cheese
¼ cup white sugar
½ teaspoon dried basil
½ teaspoon salt

Steps:

  • Bring a large pot of lightly salted water to a rolling boil. Cook the bow-tie pasta at a boil until tender yet firm to the bite, about 12 minutes; drain.
  • Quickly rinse the cooked pasta in cold water to stop it from continuing to cook; drain.
  • Mix the cooled pasta, broccoli, tomatoes, sliced green onions, celery, red bell pepper, and green bell pepper in a large bowl.
  • Gently stir the salad dressing, Parmesan cheese, sugar, basil, and salt in a bowl until evenly mixed.
  • Pour the salad dressing mixture over the pasta mixture; gently toss to coat evenly.
  • Refrigerate 3 hours to overnight before serving.

Tips:

  • Use high-quality ingredients. Fresh, ripe tomatoes will give your salad the best flavor.
  • Sun-dry your tomatoes at home. It's easy to do and you'll get a much better flavor than store-bought sun-dried tomatoes.
  • Make your own dressing. A simple vinaigrette is all you need to dress this salad.
  • Don't overcook the pasta. Cook it al dente so that it still has a bit of a bite to it.
  • Add some protein. Grilled chicken or shrimp would be a great addition to this salad.
  • Serve the salad immediately. The pasta will start to absorb the dressing and get soggy if you wait too long.

Conclusion:

This sun-dried tomato bow-tie salad is a delicious and refreshing summer dish. It's perfect for a light lunch or dinner, and it's also easy to make ahead of time. So next time you're looking for a healthy and flavorful salad, give this one a try.
