4 c fresh fruit (i used blueberries, strawberries and peaches)
2 Tbsp sugar
1/2 c butter
1 1/2 c self-rising flour
1 c sugar
1/2 c brown sugar
pinch salt
1 tsp orange zest, (optional)
1 1/2 c milk
1 tsp vanilla extract
3 oz cream cheese, cubed (optional)
cinnamon sugar

Steps:

  • 1. Preheat oven to 350 degrees. Melt butter in a 9 x 13-inch pan as oven preheats being careful to not burn your butter. Once melted remove pan from oven.
  • 2. Clean and cut up fruit, sprinkle with 2 tbsp sugar and gently toss; set aside.
  • 3. In a medium mixing bowl, whisk together the flour, sugar, salt and orange zest. Add milk and vanilla; whisk until combined and no lumps.
  • 4. Pour batter into pan with melted butter; top with fruit and cream cheese. Sprinkle cinnamon sugar on top.
  • 5. Bake at 350 degrees for 40 to 45 minutes.

Steps:

  • Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
  • Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.

1 pint raspberries

1 pint strawberries, hulled and sliced in half
1/2 cup granulated sugar, plus more, for dusting
Pinch cinnamon
2 tablespoons cornstarch
1/2 lemon, juiced
1 recipe Blueberry Scone Dough, recipe follows
Melted butter
2 cups unbleached flour, plus more for rolling berries
1 tablespoon baking powder
1 teaspoon salt
1/3 cup sugar
1/4 cup unsalted butter, chilled and cut in chunks
3/4 cup buttermilk or cream
1 egg
1 pint fresh blueberries

Steps:

  • Preheat oven to 400 degrees F. In a mixing bowl, combine berries with sugar, cinnamon, cornstarch and lemon juice. Stir gently to combine. Spread berry mixture out on a 10-inch tart or gratin dish. Dollop spoonfuls of scone dough evenly over the top of the fruit; leave a border around the edge of the dish for spreading.
