Yield 4-6 servings

Number Of Ingredients 9

1 pound pasta
Kosher salt
1/2 cup olive oil
2 large garlic cloves, finely chopped
3 pints cherry tomatoes
1/2 teaspoon freshly ground black pepper
Pinch of sugar
1 cup coarsely chopped fresh basil
Freshly grated Parmesan (for serving)

Steps:

  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente; drain and transfer to a large bowl.
  • Meanwhile, heat oil in a 12" skillet or wide heavy saucepan over medium-high. Add garlic, then tomatoes, pepper, sugar, and 1 tsp. salt. Cook, stirring occasionally, until tomatoes burst and release their juices to form a sauce, 6-8 minutes.
  • Toss pasta with tomato sauce and basil. Top with Parmesan.

Tips:

  • Select the ripest and freshest tomatoes: Use tomatoes that are deep red in color, feel heavy for their size, and have a sweet aroma. This will ensure the best flavor in your pasta.
  • Roast the tomatoes before adding them to the pasta: Roasting intensifies the sweetness of the tomatoes and gives them a slightly smoky flavor. This adds depth and complexity to the dish.
  • Use a high-quality olive oil: The olive oil you use will make a big difference in the taste of the pasta. Look for an extra virgin olive oil that has a fruity and peppery flavor.
  • Don't overcrowd the pan when cooking the pasta: If you add too much pasta to the pan, it will not cook evenly. It is better to cook the pasta in batches if necessary.
  • Serve the pasta immediately: Pasta is best when served immediately after it is cooked. This is when it is at its most flavorful and al dente.

Conclusion:

This summer tomato pasta is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is packed with fresh, flavorful ingredients and is sure to please everyone at the table. With its vibrant colors and tantalizing aroma, this pasta dish is a celebration of the summer season. So, gather your ingredients, fire up your stove, and let's get cooking!
