Sugar Free, Gluten Free, Low Fat Peanut Butter Banana Bread image

This banana bread is so good, I can't keep it around my house for very long - and I have to make a double recipe every time! And since it has no sugar, flour and very little fat - I have no problems with my kids gobbling it up! I always make a double recipe and freeze one loaf - always refrigerate the other loaf otherwise will go bad very quickly!

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your bread will be. If you don't have any ripe bananas on hand, you can ripen them quickly by placing them in a paper bag with an apple or pear for a few hours.
  • Don't overmix the batter: Overmixing the batter will make your bread tough. Mix just until the ingredients are combined.
  • Use a loaf pan that is at least 9x5 inches: This will allow the bread to rise properly.
  • Bake the bread at 350 degrees Fahrenheit for 50-60 minutes, or until a toothpick inserted into the center comes out clean: If the toothpick comes out with wet batter, bake the bread for a few more minutes.
  • Let the bread cool completely before slicing and serving: This will help the bread to hold its shape.

Conclusion:

This sugar-free, gluten-free, and low-fat peanut butter banana bread is a delicious and healthy treat that can be enjoyed by people of all ages. It's a great way to use up ripe bananas, and it's also a good source of fiber and protein. This bread is perfect for breakfast, lunch, or a snack.
