Steps:
- Preheat the oven to 325 degrees F. Pat the pork dry with paper towels and season with salt and pepper.
- In a large Dutch oven, heat the olive oil over medium-high heat, and working in batches brown the meat on all sides until a golden crust forms. Transfer the pork to a plate. To the pan add the onion, celery, and carrot and sweat until softened, 5 to 7 minutes. Add the garlic and sweat another 2 minutes. Stir in the tomato paste and cook for 3 minutes to cook off the raw flavor and caramelize it. Sprinkle with the flour and cook another 2 minutes to cook off its raw flavor. Whisk in the wine and reduce it by half. Return the pork to the Dutch oven, then stir in the beef stock, parsley stems, and bay leaves. Add the water if liquid does not come up to the top of the pork. Do not cover the pork with liquid. Cover the pan and place it in the oven to braise until the meat is fork tender, about 3 hours. Taste and season with more salt and pepper, if needed. Transfer to a serving platter and serve.

SUCCULENT PORK CHOPS
Great tasting pork chops that are great on the grill or pan fried. These chops come out tasty and juicy with just a few seasonings. This is a favorite of my family. To ease preparation you can season and then freeze. Defrost as you would normally and they are ready to cook. This seasoning also works well by seasoning meat prior to freezing. The longer it sits on the chops the better.

Tips:
- Selecting high-quality pork chops: Look for pork chops that are 1-1/2 to 2 inches thick and have a good marbling of fat. This will ensure that they stay moist and flavorful during baking.
- Preparing the spice rub: Combine the spices and herbs in a small bowl and mix well. Make sure to use fresh spices for the best flavor.
- Applying the spice rub: Pat the pork chops dry with paper towels and then rub the spice mixture all over the chops. Make sure to get the rub into all the nooks and crannies.
- Resting the pork chops: After rubbing the spice mixture on the chops, let them rest for at least 30 minutes. This will allow the flavors to meld and penetrate the meat.
- Choosing the right baking dish: Use a baking dish that is large enough to hold the pork chops in a single layer. This will ensure that they cook evenly.
- Baking the pork chops: Preheat the oven to 400°F (200°C) and bake the pork chops for 20-25 minutes, or until they reach an internal temperature of 145°F (63°C). Use a meat thermometer to ensure that the chops are cooked to the desired doneness.
- Letting the pork chops rest: After baking, remove the pork chops from the oven and let them rest for 5-10 minutes before serving. This will allow the juices to redistribute throughout the chops, resulting in a more tender and flavorful bite.
Conclusion:
This succulent baked pork chops recipe delivers an explosion of flavors in every bite. The combination of spices and herbs creates a delightful aroma that fills the kitchen and tantalizes the taste buds. The pork chops are tender, juicy, and perfectly cooked, thanks to the careful marination and baking process. This recipe is sure to become a favorite for busy weeknight dinners or special occasions. Serve the pork chops with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad, and enjoy a delicious and satisfying meal.
