20 slices pepperoni
8 ounces part-skim mozzarella cheese, cut into 20 cubes
1/4 cup butter
2 small garlic cloves, minced
Dash salt
Marinara sauce, warmed
Optional: Crushed red pepper flakes and grated Parmesan cheese

Steps:

  • Preheat oven to 400°. Shape dough into 1-1/2-in. balls; flatten into 1/8-in. thick circles. Place 1 pepperoni slice and 1 cheese cube in center of each circle; wrap dough around pepperoni and cheese. Pinch edges to seal; shape into a ball. Repeat with remaining dough, cheese and pepperoni. 2 cans of fluffy biscuits
2 cans spaghetti sauce
1 bag shredded cheese (mozzarella works best)

Steps:

  • Criss cross cut the 2 cans of fluffy biscuits, and throw into 8x8 glass baking pan.
  • Cover biscuits with 1 1/2 cans of spaghetti sauce.
  • Cover With 1 cup of shredded cheese.
  • Add rest of spaghetti sauce and stir entire mixture covering all biscuits completely.
  • Cover with cheese and bake at 350 degrees until cheese in center is brown and bubbly and biscuits are no longer doughy.

320g sheet ready-rolled light puff pastry
6 tbsp tomato purée
1 tbsp tomato ketchup
1 tsp dried oregano
75g mozzarella or cheddar
sweetcorn , olives, peppers, red onion, cherry tomatoes, spinach, basil

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Unroll the pastry, cut into six squares and arrange over two baking trays lined with baking parchment. Use a cutlery knife to score a 1cm border around the edge of each pastry square. Bake for 15 mins, until puffed up but not cooked through.
  • While the pastry cooks, make the sauce and prepare your toppings. Mix the tomato purée, tomato ketchup, oregano and 1 tbsp water. Grate the cheese and chop any veg or herbs you want to put on top into small pieces. Set aside.
  • Remove the pastry from the oven and squash down the middles with the back of a spoon. Divide the sauce between the pastry squares and spread it out to the puffed-up edges. Sprinkle with the cheese, then add your toppings. Bake for another 5-8 mins and serve.

375g pack ready-rolled puff pastry, thawed if frozen
6 tbsp ready-made pasta sauce (not too chunky)
100g wafer thin ham
100g mature cheddar, grated
1 egg, beaten
1 tsp dried oregano or mixed herbs

Steps:

  • Preheat oven to 200C/180C fan/gas 6. Unroll the pastry onto a lightly floured surface and roll it out to 40 x 32cm. Spread a layer of pasta sauce over it, leaving a 1cm border around the edges. Arrange the ham evenly on top, then scatter the grated cheese over.
  • Starting at one of the short ends, roll the pastry up as tightly as possible. Chill in the fridge for 10 minutes or so.
  • Take a very sharp knife and cut the roll into 12 equal slices, laying them flat on 2 non-stick baking trays as you go. Brush each pinwheel lightly with beaten egg and sprinkle over the herbs. Bake for 12-15 minutes until puffed and golden. Leave to stand for 5-10 minutes before serving.

1 package wonton skins
1/2 package pepperoni, chopped (you can use more if you would like)
1 can black olives
1/2 onion, chopped
8 ounces cream cheese
1/2 green pepper
pizza sauce
oil (for deep frying)

  • Mix together cream cheese, pepperoni, olives, onionn and green peppers.
  • Put a teaspoon full of mixture on wonton skins and fold, sealing edges with water or egg.
